Today, I will show you how to make "Hakka Noodles"
To make, we need....
Main taste of hakka noodles comes from chilli oil.
For that, we will first heat the oil in a deep pan on a high flame till it smokes.Add the red chillies, cover with a lid and switch off the flame
Allow it to cool for some time and strain it using a strainer. Keep aside.
Here our chilli oil is ready.
Boil plenty of water in a deep pan and add 1 tbsp oil and salt. Add the noodles and allow the water to come to a boil. Lower the flame and cook till the noodles are 90% cooked.
Add 1 tbsp of oil and toss gently. This will prevent the noodles from sticking together.
Always try to make noodles in a wok or in big broad pan.
And cook the noodles on a high flame.
Heat the oil in a wok, once the oil is hot enough,add the spring onion whites, garlic and red chillies and sauté on a high flame for 30 seconds.
Add the carrots, cabbage, capsicum and sauté on a high flame for 1 to 2 minutes.
Add the noodles, soya sauce and salt, mix well and toss on a high flame for 1 to 2 minutes.
Add the black pepper powder and 2 tsp prepared chilli oil, mix well and toss on a high flame for another 2 minutes.
Sprinkle spring onion greens and toss well
