I recently made a peach cobbler for a potluck at work, and I combined a few recipes and
I've done a little bit more tweaking since then. This peach cobbler has a very soft gooey
inside instead of that hard, crispy topping with just peaches on the bottom.
If you like this type of peach cobbler, I think you should try it. And I think this
would be perfect for Mother's Day. So, if you try it, let me know how it turns
out in the comments. Start by putting a half cup of vegan margarine
in an 8x8 baking dish. We're using 2 cans of peaches in light syrup.
Drain one and pour the juice and peaches from the other one in a bowl.
I like to cut mine into bite size pieces so they're ready to eat when the cobbler is finished.
Add the peaches and the syrup to a pot on the stove. Turn the eye to medium high and
add 1 tablespoon of vanilla extract, 1 and a half teaspoons of ground cinnamon, ½ teaspoon
of ground ginger and ¼ teaspoon ground nutmeg. Stir everything together and once it starts
simmering, stir it again--you just want to make sure all of the spices are everything
are melted and combined. And then turn it off.
In a large bowl, combine 1 cup of all purpose flour, 1 cup of sugar, 1 ½ teaspoons of baking
powder and ½ teaspoon of salt Mix that until it's well combined. Then add
1 cup of non dairy milk and 1 more tablespoon of vanilla extract.
Mix it until it's pretty smooth. It really doesn't have to be perfectly smooth as long
as most of the lumps are out and it's well combined, it'll be fine.
Remove the baking pan from the oven. Be very careful, it'll be sizzling. The margarine
should've melted. Pour in the flour/milk mixture. Don't stir
it. Spoon in the peach mixture so it's evenly distributed and that's just about it.
You're gonna bake it for 1 hour. This is full of delicious unhealthy goodness.
You're gonna taste that butteriness of the margarine and so much sweetness.
