Hey what's up everybody? Danny from Danny Mac's
Tis the season for our Holiday parties once again
As everyone knows when you are asked to go to a party
You're always asked to bring something and you know what you should
One person can't do everything What I hate though is when people
arrive and it's like knock, knock, knock! "Oh hey, so good to see you!
oh, thank you for my store bought apple pie thank you so much" or "Thank you for my
chips and salsa" Noooo!! Be creative! It's the Holiday!
Put some time and effort into it I have a really great recipe for you
to bring to your party next time It's a portobello Sage Stuffing
It's really great to make andall of the guests are going to be raving about it
Let's get started I'll show you how to do it!
So we have a bunch of simple ingredients To make a really spectacular dish
I have this really great Ciabatta bread It's a nice firm bread which I like to use
in my stuffings, firm is better because it will produce a less mushy stuffing
If you can't find this guy go ahead and use sourdough or even pumpernickel
or mix and match or whatever you want to do Just not white bread
or anything like that I have fresh sage, this is a full bunch of
sage Going to use 2 ounces of butter
I have 2 ounces of chopped garlic 1 onion chopped
Roughly 4 stalks of celery 4 carrots chopped
7 cups of chicken stock or chicken broth or vegetable broth or whatever you choose
and 4 portobello mushrooms First step guys
We're going to roast our portobello mushrooms Place them bell side down
on a lined baking sheet Drizzle with a little bit of olive oil
Season with salt and pepper Bake at 350 degrees for 12-15 minutes
until soft Since we have a little time on our hands
Let's get everything else prepared We're going to cut this bread up
into crouton sized portions or pieces rather
They don't all have to be exactly the same size
and also if you want to you can use store bought croutons
I just don't really recommend it because they are a little salty and
I think the fresh are better Now that this is almost done
we can move onto our next steps since we still have a couple minutes
Timing is going to work out perfectly for us
Alright go ahead get yourself a medium sauce pot and your butter and we're
going to get things heating up! Pan has been heating up
Add your 2 ounces of butter Get it all melted
Add your carrots Give it a stir...add the celery
Approximately 4 of each 1 onion chopped...add that
and even throw in your garlic Throw it all in at the same time
Cook this for about 6 to 7 minutes until soft and translucent
We just pulled these out of the oven after 13 minutes as you can they're
really nice and soft releasing all of their liquid, this is exactly
what you're looking for Allow these to cool for about
5 minutes and then cube them up Add your chicken stock
Which is what I'm using today I'm not adding all of it right now
Added about 5 cups If I need more I will add a little bit more
Bring this to a boil and then reduce it to a simmer
and we're going to move on Also at this point you can add your sage
We've come to a simmer add your portobello mushrooms
Make sure you get all that juice in there, it's all that flavor
that yumminess Mix that up
While all these flavors come together really season this up nicely with
fresh pepper and salt
Mix it all around Make sure you taste the liquid before
we add the bread You can always season it after but
why do things twice? (slurp) Delicious!
Little by little start adding the bread It's going to take only a short
amount of time for it to absorb the liquid and produce this really great stuffing
that you're going to bring to your friends party
Do it a little at a time, incrementally It's going to start thickening up
as you see Really mix it in well
Turn the flame off and just allow it to sit here
for about 5 minutes All of this is really going to come together
Our stuffing has been sitting for a little while
All of the liquid has been absorbed Last step, get a casserole dish
Fill it up Mm...smells unbelievable!!
Wow! And these mushrooms
Oh my god What we're going to do once
this is full, we're going to bake at 350 uncovered for 15 minutes
The reason I want it uncovered is because all of this on top
it's going to get nice and crispy so 350 for 15 minutes
