Today, let's bake a classic lemon meringue pie !
Here are the Ingredients you will need
to make the crust
50 gms sugar + 50 gms icing sugar
250 gms flour, 150 g butter
a pinch of salt + one egg
for the lemon filling
4 lemons + 3 eggs
150 gms sugar and 2 tbs cornstarch
also 75 gms butter
Last, for the meringue,
75 gms sugar and 2 egg whites
Now let's make the crust
Mix the 2 kind of sugar with one egg
add a pinch of salt and beat until fluffy
add flour with a spatula
you could also add a lemon zest for more flavor !!
last, add butter and shape a ball with your hands
and let cool in the fridge for at least 20 minutes
Now let's prepare the lemon filling
Grate the zest of one lemon
extract the juice of the 4 lemons
you should get about 150 ml of juice
Bring this to a boil
meanwhile, beat eggs with the sugar until fluffy
then add cornstarch and beat some more
pour over boiling lemon juice, stir well
transfer this back in your saucepan
and, on low heat, stir well continuously until your lemon cream thickens
set aside, let cool
Roll out your dough on a lightly floured surface
Now your lemon cream has cooled and is warm, add in butter
and whip vigorously
Let cool completely in the fridge
we are going to bake this crust for 20 minutes
using ceramic beans or a metal chain so it acts like a weight and maintains the shape of the pie
so first 10 minutes with the weights at 350°F or 180°C, then 10 additional minutes without the weights (20 minutes in total)
now fill in the crust with the lemon cream
and let cool completely
Let's prepare the meringue now
you'll need just 2 eg whites and sugar
start whipping egg whites slowly and increase speed gradually
when then start getting firm, add sugar gradually and continue to whisk
fill in a piping bag with the meringue
and start decorating the top of your pie
use a blow torch to caramelize your meringue
