Ok, today we’re going to talk about going vegetarian. Now I’m not saying that you
should become a vegetarian. I’m just saying that you should consider eating more meals
vegetarian. Research has shown that eating high amounts of meat in our diet leads to
more heart disease because it’s more saturated fat. But if we can make more of our meals
vegetarian that can be a great healthy choice and also help you include more vegetables.
So today we’re going to start with this 100 calorie whole wheat tortilla. It has 5
grams of fiber. Three tablespoons of a store bought hummus. Hummus is a great source of
protein because it’s made from garbanzo beans or chickpeas and beans are a great source
of protein. So we’re going to spread that hummus onto the tortilla. And you can use
whatever flavor hummus you want. This is plain hummus which is still a great flavor, but
they make lots of ones. They make a lemon hummus, they make a pepper hummus, they make
a roasted red pepper hummus, so whatever flavor you like. And then, I picked three vegetables
here. We’re going to sprinkle the spinach onto the wrap. And it’s very colorful too.
You can tell you’re getting lots of nutrients from all these veggies. Red pepper cut into
thin slices and then the red onion. We’re going to sprinkle that on here as well. All
you’re going to do is you’re just going to roll that up. And the hummus is great because
the veggies kind of stick to the hummus. So you’re going to pull one side in and then
the other side in. And as you turn it over it will stay more in a wrap shape. And there
you go. A healthy veggie wrap, makes a great lunch.
