In veg news, plant-based culinary experts demonstrate their talents in Portland, Oregon,
USA. Three chefs from Portland veg eateries took part in the Vegan Iron Chef Competition.
Mr. Aaron Adams, Mr. Wes Hannah, and Ms. Qausu Asaase Yaa had 75 minutes to prepare delectable
plant-based fare. To make things even more exciting, the chefs were required to use chocolate
in all their creations. These included vegan Mexican sausage lettuce wraps and cocoa gnocchi,
which is a small potato dumpling dish. Ms. Asaase Yaa was declared the winner with her
fusion of West African and Caribbean flavors in ground-nut and cocoa soup, fried plantains
with a chocolate-coconut dipping sauce, and peanut toffee with chocolate-cashew cream.

#29 Qausu Asaase Yaa (f): We cooked all of our traditional foods in this competition
and it just shows that that is what is good. We just stuck to what we know… centuries
and centuries of traditional food.
Ms. Asaase Yaa and her husband, Mr. Papa Wastic, spoke of the growing popularity of the vegan
diet.
#29 Qausu Asaase Yaa (f): I think that vegan food is definitely a positive trend and that
it’s picking up more and more among many people because they can recognize the health
benefits for it and the overall goodness for your body. So I can see even more people in
Africa are picking up on the vegan and vegetarian cuisine.
