Today I will show you how to cook Kabuli pulao
To cook this recipe you will need the following ingredients
Rice
Carrots
Raisins
Chicken but you can also use beef or lamb meat
You will also need 2 onions
For garnishing, you will need pistachio
Salt
and ground masala (pulao Masala)
There are 2 steps to cooking Kabuli pulao
In the first step, we will make stock (soup) from the chicken meat
I will make the chicken stock with onions
I prefer to use onions to give color to my pulao
I will dice the onions and fry them in the pan until they are brown and then add the chicken
My onions are brown now so I will separate the oil because I want to grind the onions and then mix them with the chicken
I will add the chicken into the frying pan
Add salt according to your taste
Grinding the onions
Once the chicken is perfectly fried. I will add my ground onions
if you use onions to cook the chicken in your pulao, the rice will have a beautiful color and taste better
I will add a 1/2 tea spoon of cardamom powder to improve the taste of my chicken
I will add 1/2 table spoon garam masala powder which includes cumin, cardamom powder, black pepper, and cloves
As you can see the color of my chicken is really brown so I dont need to add any extra ingredients or use sugar for coloring.
I will fry the chicken for another 2 minutes and then add 1 cup of water and leave it to soften
Make sure you dont soften the chicken too much because it will be steamed with the rice
I will add 2 cups of water in to my chicken
I will now fry the carrots and prepare them for the pulao
I will add one and half Tbs sugar into my carrot mix to sweeten the taste
Now we wait for the carrots to soften
The carrots are now ready so i will separate the oil
I have fried the carrots for 5 minutes so its not too soft
I will use the same oil I cooked the carrots with to fry the raisins for for 1 minute
Some people like to use raw carrots in the rice, which is fine but I prefer this method.
I will add 1/2 teaspoon cardamom powder to my cooked raisins and carrots
For garnishing, I will add some diced pistachio into my raisin and carrot mix.
My soup and meat mix is ready now and the raisins with carrots mix is also ready
I have boiled some water on the side and I will show you what to do next
Water is boiling hot which means its ready
I will add 2 table spoons of salt but you can add to your own taste
Now I will add the rice into the boiling water
The rice is half done and the grains have become soft but not too soft
Dont soften the rice too much because I will be steaming it with the chicken meat
Separate the water from the rice
I will add the chicken stock soup I made earlier by separating the chicken pieces. it includes salt and proper ingredients
I will add the separated chicken from my chicken stock on top of my rice and steam them together
I will add the carrot and raisins mix into a small bag I made from aluminum paper and steam it with the rice.
Cover the chicken pieces with rice so they can be steamed well
I will use masala powder in my recipe, which includes cumin, cardamom powder, black pepper, and cloves.
Now the rice is ready for steaming. I always use a cloth to cover the top to make sure the lid is closed tight
I will put the rice on medium steam for the first 2-3 minutes and then i will put it on low
Friends, the rice is now cooked. I will separate the carrot mix and the chicken pieces from the rice
As you stir the rice, you will smell the beautiful aroma of the pulao.
I will add the rice into a platter.
I will add the rice in two steps. First, half of the rice, then the chicken pieces and finally the rest of the rice on top.
I will quickly mix the carrots and raisins mix
I will slowly spread it on the rice to cover the entire top.
