Quick and easy vegetable dishes are popular in any kitchen.
And this garlicky, lemon and herb-scented broccoli is the perfect accompaniment to a variety of dishes,
especially when you want a fresh vegetable side dish, but don't have a lot of time to prepare it.
Start with a large fresh head of broccoli.
Cut the broccoli into florets,
and then into smaller bite-size pieces.
Place the small broccoli florets into a microwave safe bowl or container.
Cover the container, since the heat from the microwave will be steaming the broccoli.
It's not necessary to add any water, there's already enough in the broccoli to steam it.
Set the temperature to a medium or medium high heat,
and the time to between 3 to 5 minutes,
and then start cooking the broccoli.
Since microwaves can vary widely, you may have to experiment with the proper time and
temperature setting.
The broccoli should remain tender crisp, so don't let it become soft and overcooked.
Once the broccoli has finished cooking, remove it from the microwave,
and drain off any excess water.
Carefully remove the cover and then add:
some granulated garlic,
some finely ground dried herbs de province,
and a generous *** of butter.
Toss the broccoli until the garlic and herbs are blended and the butter is melted.
Pour in the lemon juice,
then add just a small amount of salt,
and freshly ground pepper,
and toss the broccoli one more time.
Serve with a variety of main dishes.
I'm sure you'll agree that the few minutes it takes you to make this dish are well worth it.
