This recipe was inspired by the vietnamese stuffed tomato. You can use either Pork or
turkey mince and it will taste delicious!
This is the perfect low calorie tummy warmer in winter! And after eating it, I felt really
refreshed, warm and healthy.
Lets start!
You'll need a tomato, a small ball of minced pork or turkey mince
Some enocchi mushrooms or your favourite mmushrooms Some mung bean noodles these are a low in
calories compared to normal noodle.s Ans some spring onions to season and flavour
For seasoning, youl'l need some soy sauce and fish sauce and some salt and pepper to
taste
Start off by soaking your noodles in warm water to soften them. Then cut your tomatoes
in half and scoop out the middle leaving a nice shell to stuff your mince in.
Save the bits you scooped out as you'll add them to flavour your soup later.
Now chop up your mushrooms and chives into small pieces, get an adult to do ths if you
haven't done this before. Also once your noodles have started softening chop them up too.
Put all your ingredients into a bowel and add some soya sauce and fish sauce to season
as well as some salt and pepper to taste. Mix it all up to create your yummy mince and
veggie stuffing
Now take the tomato's you've emptied out and replace the middle with your minced stuffing.
You want it to be firm so push the stuffing in with your spoon and heap it up to just
past the flat surface.
Now use a pan or a hot pot bowel like i have and add some oil to the bottom. Place your
tomato's face down so the mince will cook in the oil. Leave them to brown for a few
minutes. Once you can see them browning, add some water
or chicken stock. The chicken stock is a lot tastier, pick a low sodium real stock for
a healthy alternative.
Add the tomato bits you scraped out into the soup and cook for another 5 minutes until
your tomato is soft. When it's almost about time, add the rest of your mung bean noodles
in to create a hearty filling noodle hot pot. The noodles will suck in the yummy stock and
it'll be really yummy! Not to mention these noodles are only about 50 calories per bunch!
And now we're done! A hearty healthy low calorie meal that will keep you nice and warm through
the winter months! Although I would eat this any time of year really :) The tomato is full
of antioxidants, it provides you with 40% of your daily vitamin C needs in just one
whole tomato! That means its great for your skin and all in 16 calories! There are so
