I’m Janae Devika and welcome to Café Janae.
We’re going to learn how to make almond milk today.
You can use this as a dairy replacement if you are lactose intolerance
or just used it as a delicious beverages
if you want to try something new enjoy.
Well there’s a lot of people that are dairy intolerant.
They can’t handle lactose in dairy
and when they find out that they cannot have milk anymore
they freak out like what I’m going to do now?
So here is a great solution to a having problem with dairy and lactose
This is almond milk
you can make this with almonds walnuts pecans, cashews,
you can made it with seeds sunflowers seeds sesame seeds
- pick the kind of nuts or seed that you want and soak it overnight
just cover with water make sure your water is purified
like spring water distilled filtered water
you don’t want to get contaminants from tap water soaking into your food.
Cover your seeds or nuts with water overnight let them soak overnight
and then in the morning, rinse them off
and your ready to use them the reason we rinse nuts is because
they have enzyme inhibitors on the outside of them
and when you eat them straight away the enzyme inhibitor
make it so cant digest them and the nutrients aren’t as accessible.
So by soaking them you are increasing nutrition value
and making them easily digestible.
Today we are using almonds,
just a classic almond milk
and you can use this milk for anything
you use dairy in – as a replacement for cereals in the morning
smoothies making ice cream
anything that you use with dairy for this is a replacement
and I will tell you a little secret between you and me
after you drink this
you will probably won’t like dairy anymore
because this is so delicious
Let’s get started with 1 cup a almond
that has been soaked overnight rinsed.
Pour in the blender now
then fill the blender with the rest of the way with purified water,
bring this up to 7 cup mark is what usually work the best,
put the lid and were going to blend.
Once you get this down like the first couple of time
its kind of hassle
and its hard but after you have made a couple of times its really fast
and you can make milk in 5 minutes where just going to blend right now.
So after you blend you just want to blend until
the particles of the almond is just really small
and you can’t see the particles anymore
This is easier in a high speed blender.
Here are a couple facts about almonds that you need to know.
If you are worried about cutting dairy out
because you need the calcium or protein,
almonds are 30 % protein and that they have lots of calcium
and other pyto-nutrients that milk doesn’t have
so not only it is more digestible and healthier for you
and the taste is great as well.
So here’s the part that takes a long time blending is easy
soaking in almonds is easy
just remember to put them in the water overnight
this is the only hard part
and like I said with practice this will get really fast.
This is a nut milk bag.
It is just made of muslin any kind of unbleached muslin
you can also get this in a hardware store
like in the area were you get a jam supply
so it’s either called like a jelly bag, nut milk bag,
you can get them online or just make it yourself
it’s just a square that looks like a pillow case anyway
make sure that its big enough to put in your
whatever pitcher you can use
put it over the edge like and so
and were going to dump in the pulverized the almonds
and there all this going to do is take out the pulp from the almonds
so this will really depends on what you are making like
or your making a smoothie ,
milkshake or ice cream - sometimes it won’t matter if the pulp is there
- but if you want a smooth creamy milk without the pulp in it
then you’re going to do this.
So here’s a trick to the nut milk bag.
If you squeeze now, it’s a disaster.
Just twist the top so nothing comes out from the top
and just keep turning and squeezing and compressing
and you can they see the milk is getting out from the bottom
okay that’s it,
and all you left there is a little bit of almond pulp on the inside
and its really dry.
Kinda crumbly and you can make cookies out of that
and granola bars so will just set that aside
And now will just put a little bit of flavor in it
and can leave it like this if you want ,
but if you want to flavor it just pour it back in the blender
and all we need to add is a table spoon of a coconut oil
just make sure its *** cold pressed coconut oil
the healthy kind don’t get the refined kind
or you’ll not only be missing out on the nutrition benefits
but you will be hurting yourself as well
and will about to put in a tables spoon of vanilla
couple pinch of salt quarter to half tea spoon of salt
and some honey.
Now about a table spoon or two and we going to taste it later
and you can add more of whatever you need.
It’s up to you and the last ingredient is lecithin
this is a soy product it is used in this recipe as a emulsifier
it has other health benefits to it
but in this recipe it keeps the water milk and oil from separating
and it keeps it up creamy and emulsified and put them all there
and blend again really quickly
and your done.
Now overall, it takes less than 10 minutes once your used to it
you can get this down to 5 minutes with some practice.
It’s high in protein, high calcium,
and high vitamin content in this milk
and it’s easy to digest and really tasty.
Let’s take a quick little taste to demonstrate intuitive cooking.
There’s a lot of foam on top at first.
If you just let it sit for about 5 minutes, the foam will go away.
Ok, that tastes great to me.
Depending on your personal tastes,
you might want to add a little more vanilla, salt, sweetener,
whatever you like to make it taste how you want.
I think it’s fabulous just like that.
There you go.
Doesn’t it look beautiful? It looks exactly like real milk.
Tastes a million times better.
Use it in all of your recipes you use milk for.
Drink it straight, make ice cream out of it, it is amazing.
