Hi and welcome to City Suppers. My name is Luke Thomas and I am from Luke's Dining Room
and Retro Feasts. Throughout the City Suppers Series I am going
to be doing really quick, simple, delicious recipes that are
really achievable at home to impress your friends and family.
So in this episode I am going to be cooking pan fried gnocchi with a wild mushroom, sun
blushed tomato and a touch of truffle. It is a really quick, simple,
really really hearty and delicious.

The base of the sauce to go with the gnocchi, just hot pan with a little touch of olive
oil. Couple of cloves of garlic, again just crush them really really
simply and straight into the pan. We just want to start releasing
the flavors from them.
And wild mushrooms, you can get this from delis, your local supermarket, farmer's markets.
There is a complete mix that can change throughout the year with what is in season. Basically
wild mushrooms straight into the pan. It is really important when
you are making a sauce like this to season throughout the cooking process.
There is salt, and then some pepper.
Basically we want to start to get a little touch of color on there,
and then we are going to deglaze the pan with a little touch of Madeira.
There is plenty of color now on the wild mushrooms at this stage. Now just a little splash, a
double shot of Madeira straight into the pan. Let that reduce.
If you have got a big surface area like we have here, it will reduce
really really quickly, and then in we go with the double cream like so.
Basically what we want to do with the double cream is bring it up to the boil. That's the
start of the sauce. So at this stage I have got a touch of pesto, this is
the sun dried tomato pesto. So that can go straight in. And then also I have got a truffle
salsa here. You can buy this in jars at some really really high end supermarkets
and delis. If you do not, or can not get hold of truffle salsa, I
would suggest using a truffle oil. Again, about a tablespoon in there.
Basically we just want to stir, stir all this through.
At the end, just a handful of spinach. Again that will just wilt. Also some parmesan, some
grated parmesan. Again it works really really well. We will
turn it down to a lower heat just while we pan fry the gnocchi,
and then we will put the gnocchi through the sauce. Right at the end. AS you see it is
really really rich, really creamy. Just keep stirring that through, but do not

So what I will do is pull this off just to the side of the stove. A little squeeze of
lemon juice just to bring it all together and just to freshen it ever so slightly.
Touch of lemon juice and then we stir that through.
There we go. Have a little taste. Really nice, really creamy. The truffle has such a nice
richness to it. And we just leave that on the side now, and then over
to pan frying our gnocchi. So we have got a nice hot pan, and what we are going
to do is take a little touch of oil in the pan. And gnocchi, you can make your own gnochhi
which starts with a base of potatoes, mashed potatoes, parmesan, flour,
and you sometimes use semolina but basically what I am going to do here is that if
you buy these from the supermarket or your local deli, rather than boiling them I am
going to pan fry them to get a touch of color, again so it adds a bit of
texture. And it is just a really nice way of doing it. So, what
we are going to do is start pan frying the pieces of gnocchi. You want to get the pan
nice and hot and then pan fry the gnocchi for just a couple of minutes until
they go nice and golden brown.
So as you will see the gnocchi, really nice pan fried, golden brown, nice and crispy on
the outside. Now at this stage transfer the gnocchi and just go straight
into the sauce. And basically we can just bring the sauce back up to the boil.

So the sauce has come back up to the boil, got the gnocchi is in. So at this stage we
can just take it straight over to our really nice serving dish.
I think this dish really surprises a lot of people that especially I see in the restaurant
that a lot of people tend not to order vegetarian dishes because they are not vegetarian. But
this dish, when people see it and they smell it, it is so impressive because
there is so much flavor. It is so hearty. It is rich. It is just
really really delicious, and the flavor combination works really really well together.
There we go, simple, delicious, really hearty pan fried gnocchi, wild mushrooms,
sun dried tomato and parmesan.
