Hi, I'm Frank. Welcome to my kitchen. Today we're gonna to do one of my all-time favorites,
an Italian classic called Pasta Fagioli. In America we lovingly call it Pasta Fazool.
The original version is meatless; we're gonna add sausage to it. The original version calls
for beans, soaked overnight, 24 hours. We don't always have time for that. This is something
you can do on a weeknight for your family, it's the original comfort food--healthy, good
satisfying. Let's do it. Okay, we're gonna use Italian Sausage for this. There's pork,
there's chicken; there's hot, there's mild. Use what you prefer; they all work. You can
also use the rolls. Put oil. Okay, we're gonna turn the sausages. See the nice browning.
You wanna brown both sides. These look nicely browned. See how they're not cooked all the
way through--they're gonna finish cooking in the sauce. We're gonna slice these into
half-inch coins. Then we're gonna add the onions, the celery, and the carrots. We're
gonna add the chopped garlic, we're gonna salt this. Add some pepper. So we're gonna
add the fresh oregano and some crushed red chilis, optional. Okay. now for the tomatoes.
We're gonna use canned tomatoes, canned skinless tomatoes, we're gonna crush them by hand.
We're gonna crush them until they're in small pieces. Okay now we're going to add the tomatoes.
We're gonna add the chicken broth. We need to salt. It's important to make sure you use
low salt or no salt chicken broth so you can adjust the seasoning to your taste, and a
few grinds of black pepper. Okay, we're gonna take the Cannellini beans and we're gonna
drain the juices. Add them to the pot. We're gonna salt. Now we're gonna add the sausage,
and we're gonna bring it to a boil. Okay so I'm gonna put the lid on, and we're gonna
let this simmer. This has been cooking twenty minutes. We have water boiling, we're gonna
add salt. And Ditalini, shortcut pasta. This is gonna take about ten minutes to cook. In
this case, we don't want al dente pasta. We want the pasta to be soft--at least ten minutes,
twelve minutes, depending on the package instructions. We've cooked the pasta for ten minutes and
we're draining it. Kay, we're gonna add the Ditalini to the sauce. I can tell this is
gonna be good. We're going to add chopped parsley. Mm, this looks great, we're gonna
make one last taste for seasoning, specifically for salt and pepper. We're gonna add a little
more salt. Mmm, this is good. we're gonna drizzle a little fresh olive oil, and we're
gonna grate some nice Pecorino Romano on this. Oh my God, that's good. I love it, I love
it, so will you.
