Grate the potatoes with a large-hole grater.
Squeeze out as much water as possible from the grated potatoes, then place them in a bowl.
Mince 1 onion.
Mix it into the grated potatoes.
Season with salt
and pepper.
Remove the germ from the center of a clove of garlic.
Mince the clove of garlic.
Add it to the potatoes.
Mix well.
Moisten with melted butter.
Form into pancakes.
Pour a little oil into a skillet.
Place the pancake in the hot oil and cook, covered, until nicely browned. Allow about 30 minutes. Turn and finish cooking. The potatoes should be well cooked. You can see the whiteness of the potatoes when you cut the pancake.
Serve with ham or sausages for a North American breakfast.
