What's up, family, this is Jason Wrobel from the J-Wro Show rocking out
here with another delicious vegan recipe that you, too, have the ability to
make at home.
Today I'm actually doing a version of one of my favorite soups from a
rather well known chain of vegan fast food restaurants around the L.A. area
and here's the catch. They have this soup, but it's only available one day
a week. And if it's not that day of the week and you want said soup, what
are you going to do? You've got to wait until Tuesday? No, we're not
waiting until Tuesday for Tortilla Soup. We're making it here right here
right now, like Jesus Jones, oh yeah.
It's a vegan, delicious, dairy-free version of a spicy, heart-warming
Tortilla Soup, and let's get into it with our trusty Blend-Tec. Now any
Tortilla Soup worth its salt is going to have fresh, delicious tomatoes.
Add these right to the blender mug. Now you could do this recipe straight
up raw if you wanted, but since it's the colder time of year right now I'd
actually like to take a little bit of warm water. I just briefly boiled
this, and it's two cups worth and pour that right over the tomatoes.
Now next up I'm going to be adding some fresh organic, diced red bell
pepper. This is right around a quarter. It's probably a pretty big chunk.
We've diced it and add it to the tomato mix. Then we have one large diced
carrot, two tablespoons of finely minced white onion, and then we've got
two large sprigs here of fresh cilantro leaves. It's probably around an
eighth to a quarter of a cup, if you're measuring.
Now any Tortilla Soup has got to have a nice flavor balance, so in come the
spices. We've got three -quarter of a teaspoon of our Himalayan crystal
salt. You could also use a mineral rich sea salt. Now if you wanted, you
could rock some fresh garlic in this recipe. That's totally fine. I like
the more potent flavor though of garlic granules. You could use a garlic
salt, too, and we're also going to do three-quarters of a teaspoon of our
garlic granules.
And then last, I'm going to be doing like an all-purpose herb seasoning. In
this case this is a German brand called Herbamare. It's a blend of a whole
bunch of different things actually. I don't even know. Oh here we go, it's
got celery leaves. It's got leek. It's got watercress, onion, chive, lovage
- my favorite - garlic, basil, marjoram, rosemary, thyme, and kelp. That's
a pretty awesome combination. So let's shake right around one teaspoonful.
Next up is some spicy smoked paprika. You might want to just start small,
an eighth to a quarter of a teaspoon. For a little bit of tang because it's
the thing, we're got to add a half of a squeezed organic lime juice. Now
for an extra kick of trace minerals and nutrition in a recipe I'm going to
be adding a squirt of Sun Warrior's liquid vitamin mineral Rush. This is
really a simple way for you guys to add more trace minerals into your
everyday food whether it's soup. You can do this in smoothies, juices. It
has a really neutral taste, and again it is an easy way to kick up the
nutrition in your recipes.
Now traditionally you're going to be using a big old chunk of cheese in
your Tortilla Soup, and thanks to [inaudible 03:18] we've got some pepper
jack in the house. So I think I'm going to do probably right around a third
cup. Let's do that. I was going to say in between a quarter cup and a half
cup. Let's do a third cup. Cheese shreds just flying all over the place.
At this point what we want to do is do our preliminary blend because
there's one last ingredient I'm going to add and pulse at the end. So grab
your blender top, and what I advise doing since we have warm liquid in
there and we have a very full blender mug is actually get a kitchen towel
and put it right over the top of the lid. Any time you're doing super hot
liquids, that helps to prevent it from exploding all over the place. Safety
first, kids!
There's one last thing we have to do. Guess what it is? Guess, guess,
guess. We have no tortillas in the Tortilla Soup. So I'm going to take some
tortilla chips, and I'm got some sprouted sweet potato - tortilla chips
rock in here. I like to add right around a half cup. So let's give it a
quick pulse. Again, just about two or three times really, really quickly
just to make sure those tortilla chips are nice and crunched up.
You know what would take this to the next level? Fresh diced avocado on
top. Let's plate it up in our bowl, slice some avocado, and let it go for a
swim. So as you can see, this makes quite a giant portion. So you know
what? Let's take it to the face. Let's make it official here. Amazing! It's
really rich, very creamy and hearty. It's got a little bit of spice on it
because of that smoked paprika and the pepper jack cheese, but it's just
really satisfying.
To me the sign of a good soup is always one that they say like it sticks to
your ribs, but to me it's more of that heart-warming feel where you just
feel taken care of. You feel like snuggling up with a nice book and a bowl
of soup. This Tortilla Soup definitely has that appeal. So if you guys dug
