Hey everyone, it's Lunden, the Runtastic Fitness Coach, and today I have a really special guest
with me. Hi, I'm Ellen, ... at MyFitnessPal. And today we're making pumpkin pie power bites.
Okay, so give me a run-down on these power bites. Why are they good for you? These power
bites are awesome because they contain protein, a little bit of fiber, they're homemade, so
they are better than fast food, they can be made ahead of time. So if you need a quick
snack before the gym or if you're on your way out the door in the morning and need a
really fast breakfast, they can be waiting for you in the fridge or the freezer. And,
they taste really yummy! Alright, so what's in them?We have some dates, pumpkin puré,
some peanut butter, honey, with a little bit of vanilla, pumpkin pie spice and salt. And
then we have some oats, flax seed and chocolate chips. Alright, let's get started! So, I'm
going to put the dates into the food processor and run them until they become a sticky ball,
then I'm gonna add in the pumpkin puré, the peanut butter, honey, vanilla, a little bit
of salt and pumpkin pie spice, and process that until it's well mixed. And then I'm going
to dump everything into a bowl, mix in the oats, the ground outs and the flax seeds,
and chocolate chips. And then I will mix it all together really well. And when everything
is incorporated, we will be rolling them into little balls using a table spoon. And then
you put them in the fridge afterwards? Yeah, you chill the batter for 30 minutes or so
and then you'll roll them out into little balls and stick them on a baking sheet with
wax paper or parchment paper. So, there you have a really quick, easy, nutritionist, awesome
recipe you can make for on the go in those times where you feel like you just don't have
any time to get a meal. And they are pumpkin flavored, so they're great for the holidays
and anytime, pretty much. Yeah. And if you're looking for the recipe, you can find it on
