On behalf of Expert Village I'm Laura Banford. I'm going to show you how to make a seafarer's
double. Now I'm going to show you the ingredients that you'll need to make pan fried sole with
dijonaise sauce. This is some petrale sole and I'll talk about that a little bit in the
next clip but it's a nice kind of delicate flaky white fish. We're going to dredge it
in a combination of corn starch and flour, I like to add a little corn starch to the
flour because it gives it some extra character in it and extra crunchiness. Then for our
dijonaise sauce we're going to need sour cream, dejon, soy sauce, lemon juice from a fresh
lemon. We're going to saute our sole in a little grade seed oil that's a nice oil I
like to use that a lot. Then we're going to finish up with a little bit of dill and when
we come back we're going to talk a little bit about sole.
