What are some cheap ways to eat vegan?
Rice and beans are the vegan solution for much of the world. Lentils, chickpeas and
rice fuel a billion people in India.
What is closer to the western diet?
Vegetarian chili on corn chips, rice and beans in tortillas for enchiladas, bean salad, humus,
green pea soup, whole grain bread with margarine – there are lots of options.
What are your thoughts on soy based meat substitutes?
First, they aren’t cheap. Second, some vegans think they are cheating because it looks like
meat.
And others embrace it if it gets others to stop eating meat.
And many soy based substitutes include eggs as a binder. So they are vegetarian but not
vegan.
What do you think of tofu?
It tastes horrible. But tofu, rice and vegetables are mainstays of hundreds of millions of Chinese.
Why is the vegan diet so expensive in the U.S.?
One reason is because of all the convenience food. People spend more on pre-prepared meals,
which is more expensive than $2 of rice and beans that would feed one family for a day.
What’s another reason?
There is a premium put on organic and natural, doubling and tripling the price. If you skip
the organic label, you’ll pay half or less for the same product.
Isn’t all natural better? Like organic and natural products.
The Black Death is all natural.
What else would help me eat a vegan diet on a budget?
Eat seasonal foods and supplement with frozen foods. Buy produce you put in your own bag
than the pre-packed, pre-sliced and pre-prepared foods.
Like the single microwavable potato in plastic wrap for $1.
Especially when you can by five pounds for $3. Convenience costs you a lot.
Except for my time.
Soaking your beans over night and making your own soy-gurt is all natural and makes you
part of the slow food movement. You’ll fit right on in with the crunchy granola types.
You’re right, granola is a low cost food option. Add nuts for protein and fruits and
whole grains!
