Today for the Southern Queen of Vegan Cuisine Project we will be making Paula's Perfect Omelette,
or Tasha's Perfect Omelet, because it is not going to have any eggs. Here we go.
Paula's Perfect Omelette Recipe
We are going to start this recipe by sauteing our Omelet innards.
To a small pan over medium-high heat, you are going to add in onions, bell pepper, and one diced veggie sausage.
Stir those around until the onions and bell pepper are soft and the veggie sausage has a good sear on each side.
You can also add a little salt and pepper at this stage if you so choose.
Now to a small bowl, we are going to stir together chickpea flour and water.
Now chickpea flour is really easy to order offline.
The closet thing I could find in my neighborhood was this falafel mix. And, it has garbanzo or chickpea flour as the
first ingredient as well as a bunch of other seasonings.
So I was hoping and praying that it would just turn out right.
But it gave me a little trouble. When I started to fry it, it just messed up over and over again,
until this final time where I made it really small.
I was really careful when I was trying to flip it, because each time it stuck to the bottom of the pan no matter
how much or how little oil I used, non stick cooking spray, it stuck every time.
Added in my filling, folded it over and it was like this make-shift wrap thing.
It wasn't really on omelette, but it came out looking okay.
So my first thought was, this does not taste like an omelet.
Like, this doesn't taste like egg, this doesn't taste like omelette. I am so disappointed.
But the more I chewed, I was like, "this does taste like falafel though". It taste just like falafel.
I like falafel. This is amazing. I love this thing. I am going to make this all the time.
So in that regard, it turned out really really good. If people don't go into it thinking, I want eggs,
I want something that taste just like eggs, instead I want falafel with good stuff in it; then they will be satisfied.
And just a note on the vegan sausage by Tofurky,
I don't usually use meat replacement items and I know a lot of you can't get them.
This actually tasted good. I do not like a lot of soy, or a lot of tofu, but whenever it is seasoned really well and I can
fry it or cook it in some type of way. It usually turns out okay. I liked it. It was good.
