Hi, this is Dave for Expert Village. Today we're going to make what we call a stuffed
Cajun swamp log. Next we're going to finely dice up an onion. I'm going to use up about
1/2 of this large onion, this is how it's done. You want this onion fairly finely diced
so all we do is just go ahead and split it into like that again so we can have another
flat surface. Then leave the root end in tacked because that is going to hold this together
while we cut it up so just go ahead and cut this end up and then we'll just peel the outer
skin, just like that. Then just get your knife and just cut it like this just about to the
root end and you'll see how this is going to keep it together as you are doing your
dice. When you turn it sideways and you just if you want it finer if you want it thicker,
you can actually do one cut across and then down, but we want this to be fairly fine.
Then just cut down like this and you're going to get your really fine dice just like that.
