Hi, I'm Frank Isernio. We're in the kitchen today. We're going to have some fun. We're
going to do sausage and peppers; that's one of our favorites. We can do this recipe in
maybe less than ten minutes prep time. You can do this for a couple or you can do this
for a crowd. Let's get going: what we have here; we have sausage, peppers, onion, and
fresh oregano. You can also add potatoes to this dish to stretch it. I'm going to start
with the onion. Now we're going to cut these beautiful peppers, I'd say about one inch
strips. Okay, let's put everything in the salad bowl and try to separate the onions
as best as possible so they'll cook evenly. Beautiful peppers, these are just gorgeous.
I think its important to feed the eyes as well as the stomach. Now we're going to use
some fresh oregano here. You just pull it off the stem. I can smell that is so pungent.
We're gonna give this mix a good drink of olive oil, salt, pepper. Let's mix this thoroughly
now, make sure all of the vegetables are coated with the olive oil. Isn't that beautiful?
Does it get any simpler? Okay, I'm going to put those aside and we're going talk about
sausage now. Here is hot, mild Italian sausage. These are the classic ones we would use, but
you are free to use others. We're just going to brown the sausage just to get color on
them and then we are going to finish them in the oven. We've got the pan heated with
olive oil just a little. We're gonna brown the sausages slightly. We don't want to cook
these all the way through because we are going to finish them in the oven. We just want to
brown the sausage on the outside. We used a combination of hot and mild. You do not
want to cook them at too high a temperature for they can actually explode and you don't
want to do that; you want to cook them slow. Now, we're going to turn these, see you've
got that nice, light brown color. I'd say this is approximately four to five minutes
per side on a medium-low heat. This smells like home, like my mom cooking sausages; sausages
and peppers, sausage, peppers and potatoes. My dad grew a lot of peppers. He used fresh
peppers throughout the summer. Dried chili's in the winter. These are memories. we're gonna
place the sausages in a, I guess you'd call it a cookie sheet. You don't want to waste
any of this. Let's just make sure we get those good cooking juices. Now we are going to spread
the pepper-onion mixture on top. Talk about simple foods. Simple food is always the tastiest
food. You know, you could also save time if you choose to,you could brown the sausages
and while they're browning you could prepare the vegetables so your total preparation time
could be ten to fifteen minutes. Isn't that gorgeous? Now we're going to place this in
the pre-heated oven at 350 degrees. I'm going to cook it for 15 minutes. You can go take
a break, have a glass of wine; relax and you're going to have a beautiful dinner. Okay, here
we go. Look at that! It smells delicious, look at that. Here you go; isn't that beautiful.
