Today we are making a gumbo, a Caribbean variety of it and I want to tell you the different
types of meats that you can use. We are using sausage here and we are using ham. Now this
sausage is smoke sausage like in Farmer John type of thing. It has a lot of spice in it
so you want to go for the Louisiana brand that type of thing, so you want to make sure
that there is a lot of spice. You can use Andouille Sausage which is a typical one when
down in Louisiana it is a great flavoring sausage to me. It has a lot of heat to it,
a lot of smoke but I much prefer this type of smoke sausage. Then we have ham. Now this
is turkey ham. You can use any type of ham that you like really as long as it is smoked.
Generally ham down in Louisiana is called Tasso again it is highly smoked ham and to
me not as good for eating but great for flavoring. So you can even have this sort of mixture
of both types if you want. Tasso is difficult to get and is really easy to get now and most
supermarkets.
