Hi my name is Karl James owner of Creolesoul catering and on behalf of Expert Village I'm
here to show you a simple chicken and sausage gumbo. So here we have it our chicken and
sausage gumbo with a little bonus shrimp in it. We took our chicken we browned that, we
browned the sausages render off some extra oil out of that. We made our roux which is
the tricky part of the whole dish you just got to be patience take you time with it and
what we where going for is that peanut butter color for the roux. We have achieve that we
actually but we held it to our peanut butter right next to it and the colors matched exactly.
Anyway at this point you can either chop up some Serrano peppers if you like to put it
in there if you want it a little hotter. Of course some good Louisiana hot sauce but here
is where our green onions come in and you know you just want to sprinkle a few green
onions on the top. There is your chicken and sausage gumbo it is not hard to do. Like I
said the tricky part is the roux you get pass that and you are home free and these days
like I said earlier you can buy premade roux in your grocery stores almost anywhere. If
you are going to buy a premade roux go for the dark roux for gumbo anyway here you have
chicken and sausage gumbo.
