Hi my name's Andy Bates and welcome to my Videojug series on street food.
Over the next few weeks were going to be looking at some of the best food, which is on offer
in Kerb King's Cross.
From burritos to hamburgers, to wraps, to ribs, to spit roasts and of course pies. So
lets go and have a look.
My series is all about the fantastic tasting street food on offer at Kerb king's Cross.
And today I'm with my old pal Simon from Laurdos and his team.
The word wrap works really well doesn't it really because it's filling,
people are always drawn to it as well.
Yeah.
You've always got queues, you've always got long queues haven't you?
It's really worked out well for you hasn't it?
Yeah it's good, yeah it's like a good lunch time thing cause you get kind of loads of
different food groups represented and loads of and lots of different flavours, and it's
kind of really easy simple thing.
Simon whats your best seller and can you make it for me.
Beef boom.
Yeah so you get a tortilla here, hot plate's on, so you kind of want to get a little bit
of toasting going.
They should never ever be served cold should they, they should always be warmed through.
Yeah no, yeah the tortilla it's really important. kind of makes it pliable,
and also gives it an extra bit of flavour.
So some rice, long grain easy cook rice.
The bottom layer was monterey jack cheese, and that's on there and that will start melting
straight away. And those are black beans.

So you've got your warm tortilla, layer of cheese, bed of rice.
Right they're kind of cooked really slowly and then seasoned.
So we've got some beef brisket, which has been slowly cooked, probably for about 4 hours,
With all sorts of things. It's got chipotle, some garlic, onions, some different herbs
and spices.

Over to the guys to finish it off. So we've got 3 different hot sauces we've got salsa
verde, chipotle and habanero, which is a really hot one.
How spicy do you want it?
Medium to hot please.
So medium to hot I've put a bit of chipotle on, a tiny little bit of habanero,
And this is hot hot is it?
This is really hot yeah, this is scotch bonnet chillies. What else has it got in?
lime juice, sugar.
And then a nice sprinkling of coriander.
And then some salsa, and some guacamole. Some lettuce and some sour cream.
