Hey my Sweet Vs, its The Sweetest Vegan here.
Today on the show we were supposed to be making cornmeal blueberry pancakes
for the Southern Queen of Vegan Cuisine Project, but I already have two recipes for blueberry pancakes
one of them from the other time that I attempted the project.
But we are going to replace the blueberries with blackberries and get started on this recipe.
Here we go.
Vegan Blackberry Pancakes Recipe
We are going to start by whisking together our dry ingredients.
I have cornmeal, whole wheat flour, baking powder, baking soda, and salt.
Whisk that all together then grad a second bowl to whisk together our wet ingredients.
Today I am using rice milk, melted vegan butter, ground flax seed and raw sugar.
Whisk that all together until it is well combined.
Add your wet ingredients to your dry ingredients and Paula Deen says use a rubber spatula to combine.
Usually, I would just use a whisk, but we are going to do what she says and use the rubber spatula.
Heat a skillet over medium high heat, add in a little vegetable oil to keep your pancakes from sticking,
and pour in the pancakes.
Then on top of the pancakes, I am going to top with my black berries.
Once it is done on one side, try to flip it to the other side.
And as you all remember from my falafel omelette, I had a similar problem.
So I went ahead and switched to a cast iron skillet and it got a little bit better. I must admit it worked out better
with the cast iron skillet.
If you make your pancakes smaller, they are easier to flip as well as if you make sure your pan stays lubricated.
Just do it.
Now that they are done, let us give them a taste.
I am so used to having cornbread with dinner. Frying it up as a breakfast item just
felt like something wasn't right in the cosmos.
It just still felt like I needed to serve it with like collard greens and fried vegan chicken or something.
It still felt like dinner to me. It was delicious, even though it had fruit, it still felt like dinner.
I would probably make these for dinner. Dinner, dinner, dinner, dinner.
