Hey everybody! What's up?

So..it's about a 100 degrees here
and I want to die because its day 4 of the heat wave
and ugghhhghhgh
It's really unbearable
and I hope it breaks soon
So today we're going to make something really light
I have a really awesome piece of
Yellowfin tuna that I picked up earlier
We're gonna marinate it
We're gonna grill it
and we're gonna serve it with a simple salad
that has red and yellow grape tomatoes, red onions
and we're gonna make a really awesome soy
cilantro vinaigrette to accompany it
So..this is the tuna I picked up
as you can see it's gotta really great red color
to it
It's very firm
Those are definitely qualities you're looking for
You don't want anything mushy
Nothing brown
and definitely steer clear of anything that has
fluorescent like properties because there are
products out there that they inject these crazy dyes
and preservatives and I'm not even kidding you
it's like glowing and probably has a shelf life
of a hundred years
You really want to stay away
from anything that looks like that
So..we're gonna go ahead and marinate this
Let's get this marinade together
it's real simple
I have 1 ounce of Sriracha
Which you can pick up at any local supermarket
It's just a spicy chili sauce
I have 1 ounce of chili oil
I have 1 ounce of hoisin
and I have a teaspoon each of finely
chopped garlic, lemongrass, and ginger
So just go ahead and get that all in there
Whisk it all together
and just go ahead and grab your tuna
Place it in there, get it really coated
really good, all sides
Go ahead let that sit while we prepare
everything else
and you want to leave this at room temperature
Do not put it in the fridge
because when we cook it
we're gonna cook it rare
and you don't want it to be ice cold
in the middle
you want it to be at room temperature
So let's go ahead and put
together our vinaigrette together
I have 2 ounces of low sodium soy sauce
I have 4 ounces of sesame oil
apparently it's supposed to be good for
lowering blood pressure
I have 8 ounces of vegetable oil
I have 1 ounce of Dijon mustard
I have 2 ounces of orange juice
and I have 2 tablespoons of chopped fresh cilantro
OK, so essentially we're just gonna mix
everything together
I'm using a blender cup
but if you don't have one use a bowl
or whatever you think would be great
so just put everything in there
sesame oil
Get all that nice cilantro out of there
and real quick I'm adding the mustard
and what this does is
it acts as an emulsifier and
when I say that I mean that
Emulsification is the combination of an oil
and a water type substance
So what the mustard does is it creates
a bond between the two
So the vinaigrette will stay together
and won't separate
I'm using a handheld wand mixer
If you don't have one
you can use a hand mixer
if you don't have a hand mixer
you can just use a whisk or
whatever you have
Let's go ahead, pulse that up
and you see that? It is all
emulsified and it will not separate on you
I made a lot of dressing because I use this a lot
and I'm going to keep it for further use
and you do as well because you can also use this
as a marinade for fish or for chicken
There are a lot of applications
Alright so I have a little bit of a confession to make
(giggles nervously)
I don't actually own a grill
So I have a grill pan which I will be using
This is a really great
hardcore
solid iron, cast iron
grill pan and
it mimics essentially the same thing as a grill
you have these grill bars
You're gonna get grill marks
you're gonna get grill flavor
If you have a grill it is the same
fire it up and just follow the process
that I'm gonna explain right now
Now I'm going to turn on high heat
OK, now I want this pan hot!
OK, now I'm talking smoking hot
No, really I want smoke coming off the pan
That's when you know it's ready
It's gonna take about 3 minutes
So..let's let that heat up
Fire up your grill, get that hot if you have that
and ugh we will get going
Ok so I don't know if you can see this or not
but the pan is smoking
It is super hot, it's been about 3 minutes
Go ahead, take your tuna
Also before I put this in there
I am not putting any oil in this pan
because there is oil in the marinade
Alright, so you don't have to put any additional oil
(Sizzling)
45 seconds each side
and that's gonna create a perfect
rare
tuna
See, check it out
Look at those great grill marks
I told you if you don't have a grill
you can have one of these pans
It's the same thing
If you want to you can even take
a little more sauce
put it on top
Go ahead
Flip her over
Yeah, it's looking good
Smells fantastic!
Take a picture of that, it looks nice
OK, so we're about done
Let's go ahead and turn the flame off
Pick the tuna up
Looks great
Just put that on a plate
We're gonna let that rest
for a couple of minutes
while we get our salad ingredients together
So I've gone ahead I've put together some really awesome
salad ingredients that are really going to go together nicely
we have some red onion
this is a half of a red onion sliced
I have really awesome Belgian endive
we have sliced red and yellow grape tomatoes
about 4 each
and I have 2 ounces of mandarin oranges
these are canned
and they've been drained
you really can't get them fresh so...
the drained ones are ugh
or the canned ones rather are really awesome
and I have a really nice organic blend
of mescalin greens which you can purchase
at any supermarket
This is roughly about, I dunno 2 handfuls
It's just me, I'm not going crazy
So..let's go ahead and add a little dressing
Don't over saturate it
Add the remaining..ingredients
I'm gonna add the onion and add the endive last
Just go ahead and mix that up
Get it all coated nicely with that dressing
How could you not want to eat that look at that
Let's go ahead
and plate her up
and we're gonna take a couple of nice leaves of this endive
probably about 3
and I'm just gonna put it in the background a little bit
Yeah, just like that
Alright, the tuna has been resting for a couple minutes
Let's go ahead and pick that up
We're gonna slice it really thin
Still nice and rare in the middle
ugh my god!
Doesn't get better than this
It's alright if it flake a little bit
Alright, let's go ahead, and we're gonna
plate this up!
Go ahead and fan that out
just like that
We're gonna put a little bit of additional
dressing on the plate
Here ya go
