If you want to find the fountain of youth,
cauliflower's got the power to protect your body
from illness.
I'm going back to cauli to find recipes
that will have you calling for the cauliflower.
I'll be getting guidance from my spiritual food guru,
Roshi Joe,
who is the wisest man on earth.
And my best friend and lovely muse, Sunny,
who inspires my recipes, in this sitcom I call my life.

I'm here waiting on my guru and spiritual guide, Roshi Joe,
at his Zendo in the mountains.
But Roshi's not making it easy for me
to meditate on recipes that will help people
to live to 100
with his ping pong match next door.

Speaking of lifetimes, I'm still really eager
to learn how to live to 100 in this one.

Well, I know it's important to eat good foods
to keep your body free from illnesses
and to prevent your body from breaking down as it ages.
Yes.
So then, how do you feel about cauliflower?
I devour cauliflower.

But you can reveal the wonders of cauliflower
by finding recipes everyone can enjoy.
Oh.
Pick up some ping pong balls when you're in town.
His holiness can control his emotions
but apparently can't rein in his top spin smash.
Wow.
Detox isn't just for former child actors.
I'm actually talking about a different kind of detox.
The removal of waste and toxins
to decrease the risk of cellular damage.
Your liver, your colon, and your kidneys
make up your body's detox team.
And in order to do their job,
they need the right kind of foods like cauliflower,
which comes in four eye-catching colors.
Cauliflower contains powerful phytonutrients
that activate your enzymes.
Think of them as delicious scrubbing bubbles.
Toxins build up when we eat this kind of stuff
and they break down and run away screaming
when we eat cauliflower.
When it comes to comfort food,
tacos are probably at the top of most people's list.
But how about making tacos that are low fat,
low cholesterol and super healthy,
while still being flavorful. Oh, yeah.
We're gonna be doing cauliflower lentil tacos here.
So start by taking your cauliflower florets
and just adding right to the food processor bowl.
We're creating taco meat with our cauliflower here.
Okay, we are looking great.
Consistency is looking awesome.
So let's start sautéing some vegetables.
We want to start by heating some olive oil,
add some finely diced onions.
And a little bit of diced jalapeno.
So we want to sauté the onions and the jalapeno
just until the onion is slightly translucent,
about 3 to 4 minutes or so.
Let's add our cauliflower.
The texture of the cauliflower
is kind of like a fine mash potatoey thing going on.
But once we add all our spices,
it's gonna magically transform into ground beefiness.
I never thought I'd say "magical ground beefiness"
on my show, but I have.
Now let's add our garlic and our spices to the mix.
Add a little bit of cumin 'cause it's b-b-b-b-booming.
We want to add half the amount of spices,
because we're gonna keep the other half
for the end of the recipe.
Some chili powder for that authentic taco taste.
Also some coriander is gonna give this a great flavor.
Adding tomato sauce is gonna kind of
cut through the dryness of the spices
and of course, give us some tang, baby.
All right.
So this texture is looking awesome,
it's time to add the second half of our spices
plus fresh ground black pepper
and the sea salt
to meld all those delicious flavors together.
It smells like taco meat, it's gonna taste like taco meat.
And again, it's super low fat and low in cholesterol.
You've heard of a certain taco chain Live Mas?
Live mas?
How about living to a 100?
Now we have to add our final ingredient
for a little bit of extra protein,
some cooked lentils to the mix.
You have this really dense hearty addition
to your taco meat.
Oh, yes. Come to daddy.
Come to daddy.
You know what I predict?
There's gonna be an uprising of the lunch ladies
in hairnets all over the country.
Taco Tuesdays never gonna be the same.
Seriously, put into the test
with your kids, your family.
Instead of regular meat, use this,
they're not gonna know the difference,
that's how good this is.
Oh, I love to top this with shredded romaine
and a fresh made guacamole.
You guys can rock this with a fresh salsa,
with a cashew sour cream, some shredded cheese.
Whatever you want to do, the base of this
is gonna be amazing
for whatever toppings you want to throw on it.
Mmm. Mmm.
It tastes like a classic taco with all the spices,
super meaty and dense and flavorful.
And you know what?
If you want to detox, you got to eat detacos
'cause the cauliflower and the spices in here
really help your body detoxify.
Eating to live to 100 has never tasted like this.
I'll be making a healthy version
of everyone's favorite bar food.
Oh.
Kind of feel like I'm burning from the inside right now.
I told you about how well cauliflower
can detoxify your body.
But wait till I tell you
about cauliflower and antioxidants.
Wait a sec, hold everything.
What the heck are antioxidants anyway?
And why are they so good for you?
Well, our bodies have these nasty little irritants
bouncing around in them called free radicals.
Basically they attach themselves
to cells and tissue and damage them.
Da, da, da, da, da.
Cauliflower to the rescue.
It's packed with antioxidants
to knock out those free radicals
before they can do any harm.
Simple as that.
I'm heading over to see my friend Sunny
at her cafe.
She's a little under the weather.
So I'm bringing her some delicious soup.
Hey, pretty lady.
I brought you some soup
to help you with that nasty cold.
Thank you.
And I brought you flowers, cauliflowers.
Wow.
It was apparently much funnier at home.
Hey, listen, Sunny,
you got to try this cauliflower bisque.
It's got a real creamy texture and tastes
just like a classic chowder.
Mmm.
It's so fresh,
it's like a house party in your mouth.
Mmm.
A house party with a live DJ.
What is in this?
So it's cauliflower sautéed with some lemon juice,
some veggie broth, some vegetables and spices.
It's loaded with liquid goodness
to help you fight that cold that's got you down.
Hey, thank you for the cauliflowers...
dork.
Well, my cauliflower bisque
was a big hit with Sunny.
I still got to come up with a snack
that will make her swoon.
But right now,
I've got to make some cauliflower buffalo wings
to take to Roshi.
And they're gonna be sensational.
You get it?
Sensational 'cause he's my sensei.
Anyway, onto the recipe.
I have a healthy version of cauliflower Buffalo wings
that's gonna blow your mind and your taste buds.
So the first step in our recipe is
we have to break this cauliflower
up into bite size florets.
I'm gonna show you a technique
for coring the head of cauliflower
that's gonna make it super easy to get the right sized florets.
So you want to take a knife
and in a circular motion cut around the base of the stem
here like so.
What I like to do is kind of rotate
as I go and make sure my fingers are really clear
out of the way of the blade.
So as you can see, once you core it,
you can literally just...
pop that top off,
and we're ready to break it into florets.
We're gonna be making some batter
out of spelt flour and almond milk.
Give it a nice whisk for about a minute or so.
We're gonna take our cauliflower florets
and we're gonna dunk them in the batter
and put them in our pre-greased baking pan.
Did you kids remember your floaties?
I hope so.
Coating the cauliflower florets in this batter
is gonna give us that authentic texture
that you'd expect from a buffalo wing.
We're gonna bake these babies
at 450 degrees for 20 minutes.
So while our cauliflower is baking,
we're gonna make our homemade buffalo sauce.
We're gonna start with a base
of apple cider vinegar in our saucepan.
And to that we're gonna add my special spicy spice mix.
It's got some sweet paprika, smoked paprika,
cayenne pepper, chili powder and few other fixings.
Next up, we're gonna add some extra *** olive oil
and just a dash of agave nectar.
It's important to always remember to add the sweet
because if you don't, your head's gonna explode,
literally. I've seen it happen.
Over medium heat we're gonna give this a few minutes
just to come to a simmer
before we add the rest of our ingredients.
Arrowroot powder is an emulsifier and a thickener.
What it's gonna do is really give us a nice,
thick, rich, molassesy texture to our sauce.
Wow. Yeah.
It's some serious volcano action over that pan.
Oh.
There is a saying we have in Puerto Rico.
"If it does this to your face...
it's gonna taste amazing in your mouth."
So our buffalo sauce is done simmering.
Let's grab our cauliflower
and put these two perfect people together.
You can almost hear their silent screams.
"No, it's too hot.
No mas, no mas, senor.
We beg of you, please."
We're gonna bake these babies
at 450 degrees for 8 minutes
until they're perfectly crispy and tender.
That's the secret to amazing Buffalo wings.
Oh, yes.
It's time to take a taste
of the buffalo hot wing destruction.
Luckily, we have some cooling cashew dill sauce
to help us out with this process.
Okay, find your calm center.
Find your happy place...
and go.
Oh, that's a match made in heaven.
There's a fine line between pleasure and pain.
And I believe I'm walking that line like Johnny Cash, baby.
It's like a tongue explosion in the sky,
raining fiery confetti down there.
It's probably good to have a little water on hand,
nearby when you eat this food.
If you think that was hot,
I'm about to amp up the spicy, Indian style.
That's what my tongue is doing right now.
It's flipping into full scorpion.
Mm-mm.
So what do you think
of the cauliflower hot wings, Roshi?
They're quite good.
But I've had hotter.
Well, these are made with my standard,
drop-it-like-it's-hot sauce.
I mean, I also have five alarm chili.
I could eat five alarm with my taste buds tied
behind my back.
Towering inferno sauce?
Ha. For rookies.
All right.
Well, I'm still perfecting this one
but I call it my hotter-than-Sofia-Vergara-
solar-powered-thermonuclear- detonator sauce, boss.
Mm-hmm.
Wow.
You really are a Zen master.
My stomach is lined with SPF 2,000.
Well, that's handy, I guess.
Wow.
So along with keeping your body detoxed
and armed with antioxidants,
you want to keep inflammation under control.
A little bit is good, just your body's natural response
to injury or infection,
but there's nothing good about chronic inflammation.
It's been associated with everything
from cardiovascular disease to arthritis
and even Alzheimer's.
Cauliflower is stellar
for keeping inflammation in check
because it's exploding with vitamin K.
So if you think inflammation is not so swell,
a little cauliflower will help you keep it down.

I see cauliflower, a bunch of great spices,
some herbs.
What's going on here on this table?
We're gonna make Alu Gobhi
which is one of the most popular North Indian dishes.
My very first experience with Indian food,
when I was a teenager, my mom took me
to an amazing restaurant in Detroit.
We had Alu Gobhi.
Awesome.
I'm just super excited to get started here.
How do we begin our Alu Gobhi?
We are going to just put a little bit
of any kind of oil you like.
We're using canola.
Wait till that gets hot. You don't want to rush.
The next thing you're gonna put is your whole spices
which is gonna be your cumin seed.
We want to wait until what?
Yeah, popping.
Getting a little, popping like it's hot.
Exactly.
Popping and locking, just like...
Puerto-- Ooh.
Now you're talking about language, girl.
Exactly.
A little bit of tomato puree.
Yeah.
Potatoes.
Put a top in it.
And then we're gonna turn it down.
In about 2 minutes, we'll stir it.
And now you get a glass of wine.
Red wine.
That's what I do when I cook.
Okay?
You see they're getting translucent?
Beautiful.
So that's what you're waiting on.
So now we're gonna be ready for our next ingredients.
Which is?
Cauliflower.
Our anti-inflammatory super hero.
Cauliflower is the star of this dish.
Oh, so healthy, white, and a star,
like someone else in this kitchen.
Exactly.
And now ginger, cayenne,
depending on how much heat you like.
Well, you know the Puerto Rican thing.
You know, growing up--
That's not Puerto Rican.
Okay.
How about that?
No.
Okay.
There we go.
That's Boricua.
And then this is Indian.
Oh.
Let's go with coriander ground, all around.
Sprinkle all around.
Turmeric.
I'm sure it's gonna give this an amazing color.
You know what Arnold Schwarzenegger's
What?
It's not turmeric.
A little bit of a salt.
I'm gonna gently stir it.
And then we're gonna close this up again
and it cooks in its own steam.
You see how the liquid is built up again like before,
and we didn't add any liquids to it.
It smells outrageously good.
Add a little bit cilantro to this,
then in about 5 to 10 minutes it'll be ready.
You don't want it to be mushy,
you just literally want it to be tender enough
to where it still holds its shape
and it looks like cauliflower and potato.
Awesome.
The Alu Gobhi looks ready to go.
Was it easy?
Good.
It's time as we say to take it to the face.
Mmm.
Oh, yeah.
Girl, you know what you're doing.
This tastes so delicious, it's so flavorful, so spicy.
The cauliflower is just nice and soft
but still a little bit firm.
You know what this is like?
It's like, if my tongue was doing yoga
and doing the scorpion pose, kind of like--
That's what my tongue's doing right now.

Cauliflower just keeps on giving to 100.

of my cauliflower popcorn.
You want to fight the buildup of toxins in your body.

stir fry, or go raw.

Well, since you asked, it's cheesy cauliflower popcorn.

That's a you're a genius, it's scrumptious mmm.
Yes.
Now you have to tell me how you made it.
Well, I just roasted some cauliflower
and then I mixed it with some coconut oil,
some cayenne pepper, nutritional yeast,
and some fresh herbs.
It sounds simple.
