My name is Chris, I'm the guy with the Currywurst Truck
And today I'll make something special for you.
Together with my mascot Rudi, who is always with me,
no matter where I am. We're making Spaghetti Bolognese -
very simple, very natural and very very tasty.
Enjoy it!
And the dog is now off to his basket.
Ok, Bolognese is pretty easy.
Basically we start off with the onion. Onion adds a lot of flavor.
That's why I use a fresh one. That's how I do it.
It's important to know how to chop an onion, right?
Many do not know. So I'm showing it to you now.
We cut it in half. And then we basically see
all these layers. One can see that pretty well from above.
In this direction. Now when I cut it
in slices, I should always do it in this direction.
cut in the direction of these layers.
When you chop an onion hold the knife like this, so
that your hand is exactly positioned on this half of the knife.
Then you can just wonderfully chop this.
Be careful not to cut off your fingers doing that!
And now you can basically cut this in
in half one more time.
Then I get these wonderful cubes as you can see.
Alright! This should be enough.
Now we are having nice onion cubes.
Now let's start heating the pan. Ok!
Extremely important. People usually make the mistake of
putting oil into the pan while it's still cold and
that kind of stuff, right? So - first heat the pan.
And then you add the oil. I'm using olive oil here.
Ok - adding the oil.
And then I add the chopped, small onion cubes right away.
Do you hear that? Wonderful. That's the way it has to be.
Now we just let the onions get a little translucent.
They shouldn't get brown and stuff. Why? Because we're also
adding the meat right away.
That's ground beef and I use a 98% fat-free ground beef.
We also have to watch our calories a bit.
This is about one kilo.
This is easily enough for 4-5 people.
Now all of this is about 80% fried and now
we add the tomato paste to it.
Has the advantage that its taste is getting more intense.
As you can see, the consistency is already a little thicker.
That's how it should be, because
I fry it together with the tomato paste.
So now I'm lowering the heat a bit.
And in the meantime I'm going to chop a fresh clove of garlic.
Also simple. I just press it and then I can easily
skin it with me fingers.
Wonderful. And now I just cut it into slices.
Now we're taking this and adding it all.
Those were two small cloves.
Now we add the skinned tomatoes which are already cut in half.
These.
You can buy them in cans. This is really
something where I say, we use it to make the process a little faster.
We could also boil tomatoes in salt water and
peel them ourselves and so on.
But we don't have to do that in this case.
We can add some more of this Italian stuff.
This is fantastic.
We can also already add a little bit of salt.
Just a bit, because I'm also going to start tasting this.
That's another thing - everybody is cooking and cooking and not tasting it anymore.
But you have to of course.
But once you've gotten the hang of this, you can do this.
Then it will taste good.
Now we've added a little bit of salt, some pepper and
more of the Italian seasoning.
We'll keep on frying this.

And now, to make the whole thing a little more liquid,
no water, again, I don't use water
to dilute sauces. We're only going to use our ingredients.
These are diced tomatoes which we are going to add
to make it a little smoother.
I've already salted the water for the noodles.
You can absolutely add the salt beforehand.
Some more of the italiano.
Then we're almost done with our Bolognese.
This should simmer now for about, I'd say
half an hour to 45 minutes.
I'm lowering the heat and let it simmer.
Ok. And in the meantime I'll chop my basil leaves.
I've picked them off a tree.
I didn't climb on a tree. I'm talking about a small bush.
Don't use the stems, ok? They're bitter.
It's ok to press this together a little.
And I'm cutting it into thin stripes now.
Don't press it too hard though or you'll destroy the fiber of
the leaf.
I can also cut it in half one more time, once, twice, three times.
And then I can throw this in here.
Fantastic.
If you could only smell this!
And now the water is already boiling.
I'm taking my wonderful noodles now and
just lay them into the water like this.
And I'll push the Spaghetti down into the water with a cooking spoon.
Let's leave them now for about 6minutes or a little more.
It should be boiling during that time and we also won't add a lid.
In the meantime, I'll chop my basil leaves a little smaller.
And put them in here.
I'd say you can already set the table and the girlfriend can do the dishes.
And we'll have some food soon.
Add a little bit of sugar to your Bolognese.
This does not mean that it will make it sweet, but the tomato acid
in combination with the juice and spices,
adds a real kick to this.
So, heat is off. The noodles are done.
Let's drain them. In here.
But now don't start rinsing the noodles off with water.
We're not going to do that.
And then - back into the pot.
And now we'll drizzle this with some olive oil.
And there you have it! Then you just have to
stir it all.
Ok, jab jab. And now - let's serve this!
You should serve it on a nice, big plate.
A big, nice clutch.
We can also turn this a little bit, ok?
And now to the pan. Ok.
We'll just pour some of it on top.
Wonderful.
Ok. That's how it looks like.
If you want to, you can add some of that basil
on top of it.
Or you slice - slice, not grate - slice some delicious parmesan cheese...
I don't like that stuff. That's why I eat it just like this.

I'll just eat it like this.
And it smells... it's amazing!
