All right, our peas have mixed in with our seasoning, so now we're going to go ahead,
and add another quarter cup of water, and we'll let that move on until it simmers. This
is going to ensure that the peas are cooked all the way through. While we're waiting for
that I'm going to take a couple scallions, and we're going to chop off the white parts.
Not all the way back, but we're going to get rid of about this much. We're going to start
down here at the end very slowly to make sure that they actually separate into rings; we're
going to run down. If you go through sometimes really fast, you'll get cuts through the scallions,
and when you pick them out you'll have a piece that big, but just has halfway cut marks through.
I wanted a little bit of that white color in there, and then you'll go ahead and mix
them all up together.
