Make this mushroom gravy to smother mashed potatoes, biscuits, stuffing or even a Tofurkey.
Melt ¼ cup of vegan margarine in a skillet, add 1 small onion that you've minced. You're
gonna also need a cup of mushrooms that you've chopped.
Saute them for a few minutes over high heat. Reduce the heat to medium and then add 2 ½
cups of vegetable broth. You're gonna also add 2 tablespoons of soy sauce. Stir it all
together. Then slowly add ¼ cup of flour. And you just wanna keep stirring to make sure
that you don't have any lumps. Once you get the flour incorporated and you
don't have any lumps, bring it to a simmer, then turn the heat down.
Add ½ teaspoon each of sage, thyme, and marjoram. You're gonna also need to add salt and pepper
to taste. I think maybe like 3/4 teaspoon of salt and ⅛ teaspoon of pepper would work.
You're gonna cook it for about 10-15 minutes, stirring it regularly until it thickens.
