Hey Cookaholics, Chef Kendra here and today we're making one of my versions of jalapeno
poppers. This one doesn't have one cheese, it has two cheeses and it's also wrapped in
crispy bacon. So let's do what we do and head into the kitchen and make it happen.
Our stuff is good to go, so let's get right to preparing our jalapenos. We're just going
to cut off the tops, slice them in half and gut them with a spoon, just like so. We're
getting all the stuff out seeds, membrane and pith. This will take most of the heat
away.
Now to this bowl we're adding Mozzarella cheese, some soft cream cheese and some green onions
aka scallions get added. So we're just going to stir this thing up until everything is
mixed in really well. We're going to preheat our oven to 350 degrees.
Now we're going to stuff each pepper half with our cheese mix and spread it out smoothly.
These are pretty large jalapenos so about ½ Tablespoon of mix give or take. Just spread
evenly between peppers, no big deal.
Alright, now we're going to wrap these boys in our glorious bacon. The kind I'm using
is on the thick side, but I have seen way thicker and I personally wouldn't go too thick
or too thin with the bacon. We're just going to wrap these up, there's nothing scientific
to this. The only thing you want to make sure you're doing is wrapping the bacon pretty
tightly.
We don't need toothpicks or anything, just wrap them and set them cheese side up on a
baking sheet lined with foil or parchment paper with a rack on top. Bake off for 15
-- 18 minutes or until the bacon is crisp. That's all it is to it.
