Hi, I'm Jamaica from Jamaica's Cake in West LA. Today we are going to be talking about
the ingredients involved in red velvet cake. First of all, the best thing to do is to measure
out all of your dried ingredients separately. For instance down here, we have our flour,
sugar, cocoa powder, salt and our baking soda. The baking soda is going to help the cake
with the leveling process so that it's not a flat thick heavy cake but more of a light
fluffier cake. You need oil, buttermilk, eggs, vinegar, vanilla extract and red food coloring.
Some recipes call for beat some other kinds red products that we can use anytime. Back
in the day with velvet cake from the reaction to the cocoa powder and the vinegar created
this red to this cake. Now with all the dutch process to the cocoa, it doesn't react the
same thus needing the red food coloring or the red beats to create the red velvet cake.
