Hi, I'm Jane from BlenditandMendit.com. Welcome. Today is day 11 of the 21 Day Avocado Smoothie
Power Plan that I'm doing. It's the book by Dr. Ariel Policano and Lori
Clayton, a raw food chef. And today I'm making the Carrot Cake from page 13.
One cup of carrots, chopped. This is about 1 1/2 medium sized carrots. This recipe sounds
so rich and creamy, you can use 1 1/2 cups of water or in the alternative,
you can use 1 1/2 cups of almond milk. 1/2 of an orange. This is a navel orange,
so there are no seeds in it. Go ahead and throw the whole thing in. If you don't have
a VitaMix, you'll probably have to chop it up. 2-3 Medjool
dates. I have three and I've taken the pits out,
so make sure you do that. You don't want pits in your carrot cake smoothie.
Add those three Medjool dates to the blender. 1/2 of an avocado. I have this quarter and
then I have another quarter. 3/4 cup of chopped apple.
Here's one half; here's a quarter. One tsp vanilla and 1 tsp of pumpkin pie spices.
And there is the carrot cake in the blender.
The aroma coming out of this blender, it literally smells like a carrot cake in the oven.
Watch the blades if you decide to use your hand as a spatula, because they're sharp and
they're down there, go for the corners. Stay away from the blades.
It's thick, smooth, creamy, the color of pumpkin pie.
That orange just lifts it up. It's not heavy like the filling of a pumpkin pie or carrot
cake, it's light and breezy, but it's substantial. That cinnamon and pumpkin pie spice... mmm...
This is like a dessert. If you're one of those people that goes and gets those dessert type
lattes, you will love this. Lori's the raw food chef behind these creations.
She's good. And I'm going to be intervewing Lori and Ariel, so that's something to look
forward to. Okay, luscious day 11, delicious, wonderful blend... gorgeous color...
