Hi I'm Mark Emiley on behalf of Expert Village. In this segment we're going to give you an
overview of the Scottish Ale styles, which include a Scottish 60, 70 and 80 Schilling.
Scottish beers are about showcasing malt, in particular caramel flavors, in a lightly
carbonated, not too bitter beer. The aroma on a Scottish beer is going to have nice,
malty sweetness with possible kennel caramelization nose which are going to basically pick up
straight caramel, maybe even a little toffee aspects. There may be some slight fruitiness,
and a very, very low earthy hop aroma. The appearance is going to be a nice, dark amber
to a dark copper. It's going to be very clear, but it's going to have a thin, creamy, off-white
head. The flavor is going to have a great malt backbone. It's going to be somewhat caramely,
not too much bitterness, some fruity esters, and just a kind of low hop flavor. Some of
the examples will have a peaty or a little smoky malt, but that is kind of American bastardization
of the version. The mouth feel should be on a medium mouth feel, with a moderate to moderate
low carbonization. It's going to be slightly creamy. Overall, these are going to be easy
drinking session beers with a focus on the malts.
