Hey there everyone What's goin on?
Danny from Danny Mac's Kitchen here Really excited today
Got some cool things planned for us We're going to be making
of course a little bit of seafood because I love me some seafood
We're gonna some scallops with wilted arugula and Hollandaise Sauce
Just a quick note I made the Hollandaise ahead of time
So check that video out We're gonna go to my hometown of freeport
I'm dragging you along with me We're gonna get some scallops
It's a great area There's a lot of restaurants, bars, outdoor
cafes, Music, but most importantly
The best fish markets around I'm not even kidding you
So..I want to take you along with me We're gonna go on a little journey
Im going to show you some cool stuff and we're gonna get some rockin scallops
Follow me So this my hometown of freeport
We're on the Nautical Mile The Nautical Mile is basically a stretch
It's a mile long and it's just full of restaurants, bars, outdoor cafes,
live music in the summer and best of all
Fresh fish markets This is where I come to get all my fresh fish
Early every morning an entire fleet of fishing boats goes out, they come back
and they have the best fish That's why I absolutely love coming here
and I can get it year round Now it's pretty crazy to think that
last year, this entire area was under 6 feet of water because of hurricane sandy
6 feet of water All these place were closed
But we persevered and we came back and we're back better than ever
So this is my favorite place to come this is Braccos Captain Ben's Fish Market
Really excited to take you guys inside and show you what they have
Let's go take a look Hey guys so were inside of Captain Ben's
Braccos Fish Market here in freeport My favorite place to come
I've been coming here forever They have the best stuff
And I just wanted to take you guys through and show you what they have to offer
So c'mon follow me So check out all of this fresh, amazing fish
All the variety to choose from See we have fluke, we have striped bass
Look at this American Red Snapper How awesome is that?
We have blue fish We have carribean yellow tail snapper
Fresh squid Tile fish
Flounder I'm tellin ya, come here for anything
I apologize guys I know it's really loud in here
But check out all this awesome shellfish that they have
Got littleneck clams Top necks
We got amazing blue point oysters Really great cockles
for making linguini white clam sauce We got fresh scungilli
Squid Octopus
And as you can see guys we have all different types of shrimp that you
can choose from Ranging from small, to super jumbo shrimp
Colossal Look at that
Right? Awesome!!
Fresh flounder fillets Lemon sole
Bay scallops Sea scallops
Swordfish Tuna
We got chilean sea bass We got wonderful Atlantic Salmon
So how cool was that? I got to show you where I'm from
Got to show you this great area Got to show you that awesome fish market right?
They have sick (great) stuff in there So let's get started
So we got some great arugula over here I have this Cajun seasoning which is store
bought You can get it any store
These..look at these jumbo scallops That we picked up
These, these are just insane I have finely chopped red pepper
This is about half of red pepper We got some alfalfa sprouts
And I got about an ounce here of chopped garlic
What I want you to do is because this is going to make
for great presentation Is go ahead
Get yourself a knife and we're gonna score these
and to score is just to make a very small incision
So what we're gonna do is we're gonna score
Just like that and we're gonna turn it
and we're gonna do it the other way and when these sear
It's gonna make a really crazy presentation You'll see
So..turn it
Last one here This is real simple to do right?
Not many people think to do this Alright, they're all done
Let me just double check Yup, good to go
Go ahead and just season these up with your cajun seasoning
because you want just a very light dusting So fresh
They probably got these a couple of hours ago
Ok just go ahead and pat them Get a little bit more over here
Try and keep it pretty much uniform Go ahead now that we've done this
You're gonna heat up a pan on high heat and you're going to
add about an ounce of oil Ok, we've been heating up
for about a minute and a half You really want your pan to be hot
So I'm gonna go ahead Place the scallops
the side that you seasoned down Get them all in there
It's gonna take about a minute and a half on each side
That's what I like about them They cook quick
You don't even have to move them Just let them sit there for a minute and a
half/ 2 minutes
It smells heavenly in here We're about ready to flip them over
Superb! It's been 2 minutes Let's flip these guys over
Oh yeah! I told you by scoring it
you get that really cool presentation right?
Oh yeah! Take a good close look at that
That's what you're looking for Really beautiful color
golden color We're gonna let them sit for another
minute and a half And we are just about ready
Let's do it! Go ahead, get yourself a plate on the side
and let's take them out We're going to let them rest
for about a minute Look at the great color
alright Just want to get all these scallops out of
here Don't add any additional oil
What I want you to do is get your garlic and put it
right in here We're gonna saute this up
For like 30 seconds and you got to remember that
all this oil has this great flavor of the scallops and the cajun seasoning
So it's all going to come together with the garlic
and in a second we're going to add our arugula
Uh, 25, 30 seconds Get a little brown and toasty
Alright go ahead and place your arugula in there
This is about a cup of arugula Real quick, this is a real quick process
Just toss it around with the garlic All we're doing is wilting it
That's what you're looking for Go ahead, turn your flame off
and we're gonna season this with just a little bit of pepper
And that looks great! That green really popped
Look at that! Alright, go ahead place that
Yummy arugula right in the center of the plate here
Just like so Get our scallops
I'm not putting all of these on the same plate I'm just gonna put it right around
Hm I think 5 should be good
Um you know what let's do 6
why not? Let's go ahead
and put a little drizzle of hollandaise
all around there This is gonna be crazy!
We're gonna garnish With some of our alfalfa sprouts
Right in the middle Just as so
and I'm gonna take some red pepper that's been finely diced
and just for some added color and texture We are gonna jazz that up
How does that look? Pretty sick (awesome) right!?
