Here around is the shell,
the egg yolk,
egg white,
an each dot bit of egg white, I painted in a darker color to make easier to see the movements.
First I'll show the boiled egg.
When I turn the shell of this egg everything inside it rotates.
When I hold this egg, all inside it stops too.
When I released, it remains stationary.
Now I'll show the raw egg.
When I turn the shell of this egg, due to inertial force, everything inside it tends to remains stationary.
But look that the particles near the shell starts to rotate together with the shell.
Time passes and all material is already spinning along.
When I hold this egg, due to inertial force, everything inside it keeps spinning.
But when I loose, due to friction between the egg white and the shell, the shell spinning back bit by bit ...
Over time, almost everything returns to rotate at the same speed.
