Hi, I'm Chris, an Australian who enjoys cooking Filipino dish and pairing Aussie wines with my recipes.
Today, I'll cook Puttanesca and pair it with a bottle of Barbera wine from King Valley in Australia.
Puttanesca - a tangy, salty Italian pasta dish. The ingredients are typical of Southern Italian cuisine: tomatoes, olive oil, olives, capers and garlic.
The ingredients for Puttanesca
Grana Padana / Pecorino / Parmesan
Sili labuyo / Cayenne pepper
Let's cook!!!
First step is put in the extra *** olive oil to the frying pan.
You can also include few amount of the anchovy oil because of its dominant flavor to add into the dish.
Then add in the garlic.
Then next will be the anchovies.
The add in half of the onions.
Normally, you just put in 1 piece of chili in Puttanesca. But as for me, I like it really spicy so I'll put in 4-6 pieces.
Once everything is sauteed, the onion, garlic, chili & anchovies, next step will be putting in the capers.
...then the olives.
Then add in half glass of the Barbera wine.
.. to add in the flavor of the dish.
Once its boiled, you can now add in the tomatoes.
I've put in 3/4 to a kilo of diced tomatoes.
I'm not too precious when using fresh tomatoes. Canned will be fine.
1 or 2 cans are needed when you're using canned tomatoes and it still depends on how many serving are you cooking.
Tomato paste can also be used as a thickener.
Second fresh herb will be the basil.
On the usual recipe, they don't put in too much herbs. But as for me, I normally go over the top.
...because the herbs really adds flavor to the dish.
When choosing all in one seasoning granules...
..you really need to have lots of herbs to make the dish more flavorsome if you don't want to add sugar or make it too sour and to lessen chemical additives.
The sauce must be simmered for 20 minutes in medium low heat.
While I'm waiting for my dish...
While the water's boiling, you can add in the extra *** olive oil for more flavorful pasta.
Then add in more amount of salt.
Its ready!!
So, Barbera is considered a food wine...
..meaning you get the full flavor if its paired with food.
The reason is that Barbera is highly acidic being a real grape wine.
So, Puttanesca as a red sauced pasta together with the Barbera...
...compliments each other without even noticing the high acidity of the wine.
Barbera is a light to medium bodied wine.
Typically a young wine with 1 - 2 years bottle age.
This one is 2011 for example..
They really compliment each other.
...because big wines like Shiraz and Cabernet needs to pair with meat to get the full flavor.
But this is a light dish that doesn't involve a lot of meat, only few of the anchovies.
Less tannin for a red grape wine like Barbera.
With Puttanesca and dishes that have chili don't use red wines that contains high amount of tannin (e.g. Shiraz/Cabernet Sauvignon)
If the dish is spicy, wines with less amount of tannin are preferred.
..so it won't dry your mouth while eating spicy food.
So that's my explanation about pairing the Barbera to Puttanesca.
