Eating a wide variety of fish, in season, can help keep your hearts, wallet and the
environment healthy. To be more adventurous with fish it's good to know how to choose
and prepare it. So we've asked top Which local recommended fish mongrel Duncan Wellson of
the Chelsea Fishmonger Guildford to give us his top tips.
So, Duncan, first of all, we've come to our local fishmonger. We want to choose some fresh
fish, what things should we look out for?
Well first off, I think you want to be looking out for the nice shiny fish. Lovely and slimy
like this lemon sole that excretes slime when it gets caught, so it can't be trapped, so
it's slippery. You want to be looking for firm fish, nice and stiff, with nice bright
eyes.This one's lying cold done in Colemore, and it's even got the vessel number on here.
And if you go onto this website, you can find out which boat and fisherman caught the fish.
What you don't want is something like this, which is a fish bought from a super market.
And it's already been pre-gutted, and it's got no gills in it to see the pinkness or
freshness of it. As you can see, it's quite floppy.
What you want is a nice stiff fish like this one. This is a Mackerel that we got from Colemore.
These are lying cold, as you can see this, there's the hook mark in it's mouth, very
very firm and a lot nice in color.
