What up Food Tuber's, it's DJ BBQ cooking up a recipe that you guys asked for. I'm gonna
grill up some tasty lamb kebabs with a tahini dressing. 1, it's quick, 2, it's easy and
3, it tastes good man! Hahahaha. Let's do it! We're gonna start with the rub
first. Here's our pestle and mortar. Do a couple of pinches of cumin. Throw some coriander
seeds in there. Then we're just gonna give them a good old bash. Can someone play like
Panama by Van Halen right now? David Lee Roth, Eddie Van Halen - I love you guys. There's
the cumin, coriander seeds in there. Now oregano. Chilli flakes, two pinches. We're gonna throw
a bit of sea salt in there. and there's our lovely, tasty rub man. Van Halen will be stoked
on that, you know?! What? Eddie's like 'Man that looks really good'. I haven't even begun
Eddie! And now, this beautiful leg of lamb ***
out. Where's my dog? Can I get a woof woof. Woof woof. Woof woof. Woof. Woof woof. Woof.
Haha. So anyway, we're gonna chop up this lamb. Nice big old square chunks. We're using
the leg of lamb because we want a nice, tender cut. You can also use neck meat or rump. We're
gonna put these bad boys into our rub. And now I need a bit of olive oil. So now I'm
just gonna give it some love. Here we go. Our lamb is waiting for the vegetables so
I'm gonna give it a little bit of a wash real quick. And now aubergines, or as my friends
on the left-side of lake Atlantic call it, eggplant. It gets kind of gnarly and caramelised
and it's super tasty, it works with lamb! Say it with me - lamb. Lamb! There we go.
You guys are awesome man! Now it's the turn of onions. I'm gonna do some big ol' chunks
on this bad boy. So there's our vegetables. We're gonna now just start skewering. You're
gonna be our base because you're our toughest. And then I take that chunky bit of lamb. I'm
gonna go through the skin of the aubergine because it's tough and it'll stay on there.
Then we've got some beautiful cherry tomatoes. What do you guys say? Tomatoes/tomatoes? Tomatoes.
Tomatoes! Toodle pips, chop chop, hello. That's a beautiful hunk of lamb and I'm gonna
put on a bit more onion. It's like border control. They kind of keep it on there, see.
start with an onion on both sides, okay? How good does that look? Wait 'til I cook it.
Ok, so I'm gonna make three more of these things and then it's time to grill!
Alright, last kebab done. Let's get grilling! Umm it is coming down, and I'll still BBQ
in the rain, I don't care but I just wanna stay semi-dry. Ok so this is our BBQ and I

onto the grill. Get over there boys. Now just as quick as the rains have come they have
abated and given us some respite. Dude I'm good with those words! Abated and respite?
Are you kidding me?! Anyway, we've gotta turn these bad boys. I'm getting that kind of nice
colour on the onions and the lamb is looking beautiful. It's now time to give these guys
a bit of pomegranate molasses. This stuff's actually from Turkey. Mélasse de grenade.
Now we glaze! Alright, that's just gonna add an extra layer of really lovely flavour to
the kebabs. It's sweet, it's sour, it's awesome. We're gonna give these guys about another
five to eight minutes. In the meantime I'm gonna make a lovely tahini dressing. Tahini,
a spoonful of that. Lemon juice. The same amount in olive oil. Couple of dollops of
yoghurt. There's our tahini dressing. Come over here and let's see how our kebabs are
doing. Wait, wait, hold on, hold on, hold on. Can I please get a bit of fanfare. Back
it up, back it up, let me begin. Here we go! Yes! They're so stoked. Earth is just clapping
right now. Yes, yes, you're welcome. Papua New Guinea, you're welcome. Worthing, you
also are welcome. Hahaha they are done! I've got a tray and I've got some sesame seeds.
Into the tray like this. You take our kebabs, roll them into the sesame seeds. We just hit
them with some direct heat right there! *** your kebabs with DJ BBQ! Alright, one last
thing, we've got our pitta breads, let's get them on there. And there's that little oven.
So I'm taking you guys all off. Let's get our pittas off. I tell you what, those onions
did a good job didn't they? Oh man, all this meat is perfect, look at that. Chuck in some
onions, some tomatoes, some of that lovely lamb, get it in there! And now, put some dressing
on there. Lettuce. Take a squirt of lemon and you'll just set it right off.
