[Susan O'Malley] I'm serving a morsel of love today
for Valentine's Day, are you interested? Okay, great.
It's interesting because one of my friends told me
once that chocolate was a vibrational food and I love this idea
of a food that vibrated, that had some kind of
internal force to it, and chocolate actually does that to us.
It shifts our internal state, which isn't completely
intuitive because its flavor is
really bitter and
earthy and dark. Scientists are still trying to figure out
exactly why it shifts our internal state the way it that it does
and why it makes us feel so good when we eat it.
But this has been a long known thing though;
the Aztecs and the Mayans used it as
a way to honor their deities. So we can feel
actually royal in a sense when we are able to eat chocolate.
And I'm serving you chocolate today that was
created by an artist/chef
named Kristen Cole. She's in Oakland, California.
And Kristen really imbues her food with love; she really believes in the
importance of
love and food. So
in honor of her efforts in creating this
tiny beautiful little morsel for us, we will give it love.
So however you
think about love you can look at your little piece of chocolate and
admire it like it's your loved one
or even ask it to be your Valentine maybe
and appreciate its beautiful form, its little imperfections as well,
and you can look closely at it and you can even bring it close to your nose and
smell the different flavors and when you're ready
you can slowly savor and taste the wonderful flavors
that Kristen prepared for us today. And over the summer
Kristen and I talked about food and love
but she really believes in kind of the whole picture
in food, and in the ingredients that she uses
and in the flavors that she's combining and
in the way that she's serving it to create community.
For this particular chocolate she plucked the rosemary from her backyard and
put a dollop of honey on top of it, that's a local honey, and used this really beautiful
Maldon salt to give it a really incredible burst a flavor that
really melts on your tongue and so...
no matter what happens today
you can savor this little bite and know that you felt love today on Valentine's
Day.
