The TAGLIATELLE
For every egg we need 1hg of flour
for how many people are we cooking today?
5 people
5 eggs... and 500hg of flour
I don't weigh it, I guess it more or less...
so, 5 eggs; one egg and 1hg of flour per person
let's do the usual "volcano"
see, what a beautiful hole...
a pinch of salt
olive oil
4 eggs could be enough, but we'll do 5
if tagliatelle will be too much, we could warm them up for another meal
5 eggs, a pinch of salt and a bit of flour
well, half a kilo of flour
whisk with a fork when they still are in the volcano
see... poor eggs..
little by little...
mix the flour with the eggs little by little
you can do also all at once but the eggs would come out,
doing so everything stays together
once you've mixed it up with the fork,
you can start doing it by hand
with an energetic movement of hands
so, the pastry board is well clean...
this is important
once you mixed eggs and flour, it has to be clean, no flour left
how can we understand when it's kneaded enough?
it has to be smooth and compact
see, it has to be smooth and with blisters
sort of balls of air...
yes, air balls...
see... "what it means to be instructed"... as elderlies said
see how it's beautiful
see how it is inside, the small holes...
it means that it's well kneaded
and this is the quantity for a sheet of pastry
***various chitchat
see how the dough moves with air inside while I'm rolling it out...
this is because is well kneaded
and now, the rolling stick!
***chatting about when grandma was young
***talking about nature
***talking about olives, oil and wine
***chitchatting
***talking about people...
thickness is almost correct
yes, almost done..
it's become larger and bigger...
awesome
well, it's DONE!
leave it to rest and dry on a tablecloth
do we have to cover it?
no..
leave it to breathe in the air
how long?
it could need 10 min or 30 min, depending on the humidity of the room
a bit of flour on top..
to avoid it to stick
roll it up...
ready, see how great they are...
they're awesome!
I told you, this is the greates moment
Look how beautiful... the tagliatelle
the best part is when you cut them...
Gianni, if your son-in-law wants some tagliatelle,
told him I could do them...
but I want to be well-paid... :-)
as the proverb say:
"for nothing, not even the dog move its tall..." :-)
see gianni, they're beautiful
you can also doi it this way... like a nest
but if you eat them immediately, it's not worth it
wow, a triumph of tagliatelle!
and we're going to eat them soon...
oh yes, we'll enjoy them!
