Quinoa is a protein-packed superfood that’s also very versatile. Today, I’m making quinoa
pancakes with a fresh blackberry syrup topped with a sweet dollop of honey greek yogurt,
a unique spin on your classic pancake. This was a highly requested recipe from my snapchat
@honeysucklebee so here’s the video! Be sure to follow me!
In a medium sized pot I’m adding a cup of blackberries, ½ cup of water, 1 tbsp of sugar,
and a squeeze of lemon. Now, i’ll head to the stove and cook it for about 15 minutes
on medium heat. When the blackberries start to look a little cooked, about 5 minutes in,
I’ll just take my masher and help it macerate. This will release the delicious blackberry
flavor. I’ll let it simmer for a few more minutes, then strain it into a bowl. I’m
straining it because I don’t want seeds in it but if you like the texture then feel
free to just leave it as is.
Now, I’ll move on to my pancake batter! In a blender, i’ll grind ½ cup of quinoa
and ½ cup of rolled oats. You can use a full cup of quinoa, but I like a mixture of quinoa
with oats. I’ll add the mixture to a bowl and then I’ll add in the rest of my dry
ingredients. I’ll add in 1 tbsp of sugar, 1 tsp baking powder, and ¼ tsp of kosher
salt. Then I’ll whisk it up well. For my wet ingredients, I have 1 cup of coconut milk,
1 egg, and ½ tsp of vanilla extract that I’ll mix together and then pour into my
dry ingredients. I’ll stir them all together until I have a nice and thick batter and then
I’ll head over to the stove to cook them.
Using a cast iron skillet I’ll heat it up to medium heat. I’ll add 1 tbsp of butter
and wait for it to melt. Next, I’ll scoop about a ½ cup of pancake batter and fry it
on each side for a minute or until it’s golden brown. A good way to tell it’s ready
to flip is when you start to see bubbles around the edge. I’ll flip it and let it cook for
another minute before plating. I like to stack 3 pancakes at a time but before
I pour on my blackberry syrup, I’m going to make my honey greek yogurt topping. I’m
just taking 2 tbsp of greek yogurt, a drizzle of honey, and mixing it. Finally I’ll drizzle
my blackberry syrup all over the pancakes, add a dollop of the honey yogurt, and garnish
with a fresh blackberry. So pretty, right? And it’s delicious too!
It’s fluffy, nutty from the quinoa, and I sense the coconut flavor from the milk.
