Today we will make baingan katri.
It is also called as baingan kachari. It can be served as a side dish and also as snacks.
Let’s see what ingredients are required for making baingan katri.
Brinjal - 1 medium size
Curd - 1 tbsp
Wheat flour - 2 tbsp
Oil - ¼ cup
Green coriander - 2 tbsp (finely chopped)
Turmeric powder - ¼ tsp
Coriander powder - ½ tsp
Red chilly powder - ¼ tsp
Chaat masala - 1 tsp
Salt - ½ tsp
Black pepper powder - less then ¼ tsp
Mix all spices in curd firstly for making baingan katri.
Add red chilly powder, coriander powder, turmeric powder, black pepper, salt and half quantity of chaat masala.
Mix all ingredients nicely.
Now cut Brinjal.
Slice thinly in round shape for about ½ cm thin.
Now give cuts on the Brinjals slices on the upper layer so that the spices get mixed well.
Like wise give cuts on all Brinjal slices.
Now coat the slices from both sides with the prepared masala nicely.
Now marinate brinjals with flour.
Like wise marinate all brinjals.
Now we will fry them.
Don't deep fry just shallow fry the brinjals.
Take 2-3 tsp oil on a tawa.
Spread oil evenly on the tawa.
When oil gets hot gently place the brinjals on the tawa.
When it becomes cripsy and brown from one side flip the side.
POur some more oil on the brinjals.
Flip them once they get golden brown color from the base.
Cook until brinjals get brown from both sides evenly.
Like wise cook rest of the brinjals.
Take them out in a plate.
Now sprinkle some chaat masala and green coriander leaves on top of the fried brinjals.
Baingan katri is now ready.
Serve as side dish or as snack.
