ingredients: 250ml whole milk 380g of bread flour 40g of strong flour 40g sugar 1/2 teaspoon salt 1/2 teaspoon baking soda 3 egg yolks 20g cocoa powder 10g dry yeast bakery 50g of butter. At room temperature.
Mix the ingredients except the butter and 40g flour.
When the dough is smooth and manageable put the butter.

We can add more flour if deemed required by us (we have reserved 40g)
We seek a clay-like texture.
Make a ball, and leave 1 hour in an oiled bowl.
The mass will be folded about its volume.
Crush the dough to just over 1 inch.
Cut circles of about 8 centimeters.
And the inner circle about 2 centimeters.
Cover with a damp cloth and wait about 1 hour.
Glaze: put 150g of icing sugar and 3-4 tablespoons of water.
2 fingers warmed olive oil to fry over low heat.
After 1 hour the donuts have doubled in height.
Fry 1 minute on one side and somewhat less by the other, dry and put on absorbent paper towels.
