We make all vegetables, potatoes, brinjal, paneer, capsicum but there is also something called usal.
Once in a week I always make usal.
Thus, today I am going to share the recipe of matki (moth bean) usal with all of you but for that keep watching Archana's Rasoi!
Let's have a look at the ingredients required for making matki usal which will serve 3-4 people.
2 tbsp oil, water for cooking, 2 onions finely chopped, 1 tomato finely chopped, 250g matki (moth beans).
Coriander for garnish and cooking, 1 tbsp mustard seeds, 2 tbsp grated coconut, 1 tbsp red chilli powder/mix masala.
Salt according to taste, 3/4 tsp asafoetida and 3/4 tsp turmeric powder.
So come, let's start making matki usal.
Heat 2 tbsp oil.
Once the oil heats, add 1/2 tsp mustard seeds, 3/4 tsp asafoetida, 3/4 tsp turmeric powder, 2 onions finely chopped.
Then add 2 tomatoes finely chopped, salt according to taste, sprinkle some coriander, 1 tsp red chill powder/mix masala and enough water for cooking.
Now add 250g of sprouted matki (moth beans).
In this dish, I haven't added sugar at any point because i am going to add grated coconut in a larger quantity.
However, if you don't want to add coconut, sugar can be used as a replacement and for the seasoning a few curry leaves can also be used.
Now I am adding 2 tbsp grated coconut.
Now cover the saucepan with a lid and let the matki cook for a few minutes.
The usal is ready now.
Garnish with some coriander and grated coconut.
Matki (moth beans) usal is ready to serve.
When one says usal, one also thinks of misal.
You can make misal, using 2 tbsp of oil, once its heated well, add crushed garlic cloves, add some red chilli powder or mix masala.
Then add some water, coriander and this matki usal to it. Let it boil for a couple of minutes and serve it with some bread.
