Hello, I'm Archana and welcome to Archana's Rasoi (Kitchen)!
Today we'll try something different.
Today I'm going to teach you to make Shahi (royal) toast!
Everyone always wonders how exactly Shahi Toast should be.
Some put rabri (Indian sweet dish made from yoghurt and buttermilk) on it.
Some even like to make a mixture of milk and mawa (khoa) and use it on the toast
Today, I'll teach you how to make shahi toast differently and easily.
Stay tuned to Archana's Rasoi.
Let's take a look at the ingredients we will require to make the Shahi toast.
1 packet bread, slices cut from the center so it looks like a triangle.
And then we have fried it in oil till it becomes brown.
500ml milk, 2 tbsp almonds and pistachio chopped, 1 tbsp rose water, 150gm mawa/khoa (Indian milk cheese), 150gm sugar
Water as much as it's required. Usually around 250ml water.
Now let's begin.
First, let get this cooking pot out of the way.
And take this vessel, and we will boil this 500ml of milk in it.
And till the milk boils, let's arrange the bread (that we have fried) in the cooking pot.
You can arrange it any way you want; we have to put them one on top of the other in layers.
These recipes are really easy, it's just that when we eat it, we get the feeling that it's really complex.
We always wonder how it's actually made
But that's what we're here for; to show you how to make delicious recipes.
After the milk has boiled completely, we are going to add it to the cooking pot with the bread.
The bread was cut from the middle into triangle shapes and deep fried in oil.
While the milk is boiling, I'll give you a tip.
If you are boiling milk in a steel vessel and you're going to boil milk in it,
Just add one spoon of water (before adding the milk) so the milk doesn't stick to the bottom of the vessel.
And while boiling the milk, if you add sugar in the start them the milk splits.
So if you want to mix sugar in the milk, put it after it's started boiling.
After the milk is boiled completely, we will put it all over the bread.
After that, put the lid on top of the cooking pot and let the milk soak into the bread nicely for about 5 minutes.
Till then, we'll take the same vessel.
We'll put the water in this. About 250ml.
Now we add 150gm sugar to it.
Also adding 150gm mawa (khoa)
We have broken it down into little pieces.
You can also shred it but we want the mawa to have a chunky texture
Add some almonds and pistachio to it. We will add some now and save the rest for later.
Let's mix all of this so it boils properly.
At the same time, add the rose water to the cooking pot
The bread should be completely soaked with milk by now.
This vessel is still boiling. We should let it boil for 10 minutes.
And now we'll add that mixture to the cooking pot.
After adding that, we'll put the cooking pot back onto the gas, put the lid on and let it cook
You can also put it in the oven at this stage in a glass or aluminium tray at about 150-160 degrees
For about 20 minutes so they get a nice crispy texture. Or else you can always use the gas.
Now let it cook for 10 minutes.
Since we added the mawa water to it, it must soak a bit. So we will wait for 5-10 minutes for it.
Now let's check if our Shahi toast is done.
How do you know it's done? The water from the sides has soaked into the bread.
So let's take it off the gas.
It doesn't get completely thick; it's always in a semi-liquid form.
So let's arrange it on the plate.
We can decorate this with the almonds and pistachio we have left or you can also use edible silver.
And let it set for a bit and eat it when it's lukewarm.
So our Shahi toast is ready!
