Assalaamu Alaikum and welcome to Titli's Busy Kitchen with me Titli Nihaan.
It's the new year and by now you're feeling...
FAT!
You've made all sorts of promises to yourself to go down the gym...
[chuckling noise]
...and you're going to go on a diet. Well...
Let me get your diet off to a blistering start by showing you how to make a fantastic
Low Calorie Roasted Red Pepper Soup.
To make this soup I've got 1.2 litres of vegetable stock.
A chopped onion.
2 cloves of garlic which I've chopped.
Half a teaspoon of coriander powder and a quarter of a teaspoon of cumin powder.
400g of roasted red peppers.
Now I know what you're gonna ask.
"Titli, where did you get those roasted red peppers from?"
I've made them myself.
So let me show you how I've made them.
[Wibbly wobbly sound]
I have no idea what that was...
Anyway, I started with 900g of ripe red peppers.
Cut them into quarters and remove the seeds.
Then put them on a baking tray and brush them with olive oil
before putting them in the oven at 200°C.
After 30 minutes, I removed them from the oven
and then popped the pieces in a plastic bag to cool.
Once they're cooled, I peeled the skin off,
then coarsely chopped the remaining flesh.
Now let's get on with the recipe before that wibbly wobbly thing comes back again.
Heat a tablespoon of oil in a pain. Add in the onion and sauté gently over a medium heat for 5 minutes.
After 5 minutes, the onions should have softened.
Add in the garlic and continue to sauté for another 2 minutes.
Add in the peppers, the spices and the stock.
Bring to the boil.
When it comes to the boil, turn the heat down and allow it to simmer gently for 15 minutes.
After 15 minutes, turn off the heat and allow to cool slightly.
Once the soup has cooled a little, you can blend it
with a whizzy toy.
[whizzing noise]
Now that's what I call whizz!
Season with salt and a teaspoon of sugar.
Bring back to the boil before serving.
It's only 60 calories a serving! Go forth and slimmify!
The great thing about this soup is it is delicious on it's own
or you can add something into it like some crumbled feta cheese or some pasta
or some cooked beans and turn it into a complete meal.
