Today recipe is an asian one, a Korean recipe, and it is the natural continuation of Kimchi recipe.

This is "kimchi jjigae" (I may pronounceted it a bit wrong).
What is it? It's a kimchi soup. This is "kimchi jjigae" (I may pronounceted it a bit wrong).

It's really easy, once kimchi is made, not much is left to do.
All the ingredients, such as tofu, can be found easily.
I tried to do a vegetarian version, but you can use also meat such as pork or beef.
So, if you make kimchi using miso instead of fish sauce, you'll obtain a total vegetarian kimchi and accordingly a total vegetarian kimchi jjigae.
There is just one ingredient that may not be found so easily, here the picture. It is a korean red hot pepper paste.
Anyway, I find it at the Asian supermarket in my city everytime.
Be careful to use this hot pepper paste according to the hotness of your kimchi!

First, place the kimchi and its sauce in a casserole.
Add the cut onion.
Add the cut green onions.
Add the sugar
and the korean red hot pepper paste.
Cover all the ingredients with water.
Close with the lid and cook for the first 10 minutes at high heat, then turn down the heat and cook for about 20-30 minutes.
Meanwhile, cut the tofu into little cubes.
Once the soup is ready, add the tofu and cook for 10 minutes.
Your kimchi jjigae is ready to be served.
A little sesame oil to complete and serve it with a bowl of boiled white rice.
