Today we will prepare a delicious traditional Maharashtrian recipe - Puran Puli.
Ingredients required :
Maida(flour) - 1/2 cup
Atta(wheat flour) - 1/2 cup
Salt - add to taste or less than 1/4 tsp
these are the ingredeints required to prepare dough.
puran puli can be prepared only with wheat flour.
but herew e are using atta and maida mixed together
ingredients required for filing.
chana dal - 1/2 cup
gur (jaggery) - 1/3 cup
chana dal has to be soaked in water for 4-5 hours.
elaichi (cardamom) - 4 (peeled and crushed)
ghee
put atta, maida, salt and ghee in a big bowl
mix all of the ingredients well using your hand.
Use warm water to knead the flour
and prepare a soft dough similar to that as Chapati.
cover the dough and keep aside for 15 -20 mins allowing it to ferment.
Till this time let us prepare the filling to be stuffed in Puran Puli.
Put the soaked Chana dal in a cooker add 2-3 tbsp water and boil.
After 1 whistle turn off the gas.
Allow all of the pressure to escape from the cooker.
Now remove Chana dal from the cooker
. Press one grain of dal to check if it is cooked.
We will now grind this boiled dal
. Puran Puli can also be prepared with Arhar dal
but using Chana dal makes it more tasty.
Our Chana dal paste is ready so lets start preparing the filling
Heat the pan and pour 2 tbsp Ghee in it
Put Gur and cook it in Ghee till it dissolves.
We have used 1/3 cup Gur here
but if you prefer more of sweet then put 1/2 cup.
Traditionally, Gur is used to prepare Puran Puli
but if you do not like to eat sweet food then you can use sugar as well.
Put the Dal paste in the pan and mix well with the melted Gur then fry
Our Puran is prepared
add Elaichi powder to it
turn off the gas.
Knead the dough some more to make it smooth.
Break lemon sized pieces off the dough
make balls
Wrap these in dry flour.
With a rolling pin, roll one ball into a Puri 3-4 inches in diameter.
Heat Tawa (flat pan).
Take some filling (in proportion to the piece of dough or you can divide the filling into portions equal to the number of pieces)
and place it in the center of the Puri.
Wrap the Puri and close it on all sides
It is one type of Stuffed Parantha.
Press this stuffed Puri lightly with your hand
so that the Puran spreads evenly.
Now wrap this Puri in dry flour
and roll again to a diameter of 7-8 inches.
Do not put much pressure on the rolling pin or the Puri might tear.
Pour some Ghee on the Tawa
and place Puran Puli on hot Tawa.
When the lower layer of the Puran Puli is cooked we will overturn it.
Pour some Ghee and spread it over the Puran Puli
then overturn it again.
Apply Ghee to this overturned side as well
and cook Puran Puli on a medium flame till both sides turn brown.
Take out Puran Puli and keep on a plate
Repeat this process with all the pieces of dough.
Puran Puli is ready
, it is crispy on the outside and soft in the inside.
We have prepare 7 Puran Puli with 1 cup of flour
and these Puran Puli can be eaten and stored upto 2-3 days.
Serve with Chutney, pickle or your favorite curry
