My restaurant in Toronto was called "Romagna Mia"
We were called that for fourteen years but we changed the name just last year
because we needed to renew our identity
so we changed the name
When I sent the letter to my clients the only one to respond
was the musician Casadei who begged me not to change such a beautiful name
It's called Paganelli's now
How we became relevant: working hard to let people understand what's real Italian cuisine
At home, I think the Canadians eat poorly
or at least not like Italians
They eat, I think, with too many spices
especially too much pepper
I teach at a college,
the first thing I tell my students
you must use no spices except salt
Because salt is a helper of flavors
but pepper and other spices mask the flavors of what we're making
of what we're presenting on the plate
I chose to make a recipe of Strozzapreti pasta wrapped in Prosciutto
with a crust of Grana Padano cheese and cherry tomatoes with basil
This plate consists of
what I was born with, those flavors
sausage, pasta, prosciutto,
everything else that comes from a pig, from our land
