Hi! My name is Brandon Sarkis on behalf of Expert Village. Today I am going to show you
how to make rustic Italian bread, tomato and Parmesan Soup. It is going to be excellent.
Okay let's run through our ingredients for our bread and Parmesan soup. First thing first,
tomatoes. I've got about six normal size tomatoes here. These are vine ripened. You could probably
use as few as four and as many as eight depending on the size. Basically what you are looking
for is about four pounds; three and half, four pounds of tomatoes total. I've got about
three and half pounds here. Also, you are going to need the salt and pepper which go
in everything. You are also going to need a half a teaspoon of sugar. Just basically
a pinch of sugar. Also got eight ounces of Parmesan cheese here. Unfortunately where
I bought it at, all they had was in little chinked wrapped packages like this, so I am
going to have to do it myself. But sometimes you got to a lot of those cheese shops, they
will sell you one whole big block. Unfortunately I could not get eight ounces so I did buy
two packages to make it eight ounces. You are going to need some olive oil; something
good I hope. I've also got one yellow onion here. I have one rib of celery, one stalk
of celery. I also have three cloves of garlic. It looks like two but this right here is actually
two in itself so that is two plus one makes three. Let's see what else I have here. I
have my tomato paste. I've got one tablespoon of tomato paste. I know you are saying to
me, why tomato paste? You know you've got fresh tomatoes here. Tomato paste imparts
the flavor that you can't get from regular tomatoes so we are going to go to the tomato
paste and we will dump more into this topic later. I've also got one quart of vegetable
stock and you are also going to need one quart of water but I figure you know what water
looks like so; a quart of vegetable stock and a quart of water. We also need eight cups
of bread; preferably sour dough. I've got a nice sour dough loaf here that we are going
to get eight cups out of in a moment. So with that, let's go ahead and go through our equipment
and see what we are going to need and we will get rolling.
